Got mash leftovers? No problem. Loaded, crispy mashed potato fritters are perfect for an easy next day lunch or breakfast, for the kids. You can pretty much add whatever you want to the mix. Grated carrots, onions, a little red pepper: There’s not a lot a mash potato fritter doesn’t go with!
Mashed Potato Fritters
These brilliant yummy and totally kid friendly potato pancakes are literally a potato patty cooked in a skillet until it’s one of the simplest yet most delicious things going.
I usually make the potato cakes mix with leftover mash, but if I’m honest there are a few things I make with left over mash (this being on of the most popular!) and so when I’m making mash I make a double batch. Sssshhh :)
While I guess this is really a side dish, pop a poached egg on top of this and it becomes a breakfast you’ll be wanting to eat again and again, let alone the kids.
Make Ahead And Storing
Since mashed potato hardens up when it’s cooled, these are a fab make ahead fritter to have in the fridge ready to be popped into a hot skillet.
Make them up to 2 days ahead and you can keep them in the fridge until you need them.
What Goes With Potato Fritters?
Mashed potato fritters have been served with many things here. As a crispy fritter with potato and cheese these are always an easy win with the kids so apart form having them on their own as a quick snack, here’s some other ways you could serve these fritters:
Breakfast
- With crispy bacon and a fried egg on top
- Add a handful of chopped spinach to the fritter mix before cooking for some extra energy boosting goodness
- Lay a piece of smoked salmon over eat cooked fritter
- With thinly sliced tomato and avocado
Dinner
- With grilled salmon and veg
- Leftover roast chicken and a green salad
- Add some flaked cooked salmon for easy fishcakes
How To Stop Fritters Falling Apart
If your mashed potato is a little dry, it can lead to flaky, falling apart fritters. The eggs used in this recipe will stop this happening and bind all your ingredients together, but fritters can still fall apart in the pan.
There’s a few of things you can do to stop this happening:
- Make sure you’re using a good non stick pan like this one. Even though these fritters are dredged in flour, the mix can still be a little sticky. A non stick pan will help keep your fritters together
- Make sure you’re using enough oil or butter when you’re frying. Not only does this help stop the fritters sticking and crumbling, it crisps up the fritters beautifully.
- Resist turning the fritters until a crispy outer layer has formed. I cook fritters on a fairly low heat so I can leave them longer without burning them.
- Give each fritter enough room in the pan so you can get a spatula easily underneath the fritter to turn it
Clean Eating Fritter Recipes
Add Ins
This recipe is a simple potato fritter, and it’s delicious just as it is. But…if like me you like to play around with recipes there are a few things that are Yummy with these, like these:
- Cheddar cheese – Try adding half a cup of cheddar to the potato mix for a cheesy potatoey dreamy delight!
- Green Onion – Thinly chop some green onions and add them to the mix for added color and crunch
- Bacon – Fry some small pieces of bacon until they’re crispy and add them to the mix. Yum :)
- Herbs – Try adding some parsley to the fritters
- Garlic powder – Love garlic? As a cheats version instead of adding fresh garlic, add half a teaspoon of garlic powder to give these a bit of a kick!
How To Make Mashed Potato Fritters
Probably one of the best ways to use your leftover mashed potatoes:
Ingredients
- 2 Cups Cooked mashed potato
- ½ Cup Grated cheese
- 2/3 Cup Flour
- 2 Eggs lightly beaten
- 1 teaspoon Salt
- Black pepper to taste
- 2 tbsp Chopped chives or spring onion
- 1 tsp Olive oil or butter for frying
Instructions
- Mix all ingredients together
- Heat up a non stick fry pan on high. Add oil or butter
- Spoon around 2 tablespoons of mash mixture for each fritter. Fry for about 1 min or until golden brown, then turn over with spatula. NOTE: You can make them as bigger or smaller. I try and make 12 to a batch
- Cook in batches of 4 at a time
- Serve immediately with sour cream on the side
