Baked Avocado Egg Boats (With Crispy Bacon)

Sometimes you want a hot breakfast but don't have a lot of time, right? These Baked Avocado Egg Boats are here to save the day! They're quick and easy to make, come in their own little boat shaped bowls and involve a runny egg yolk and some crispy bacon. Need I say more...?!

There's something about giving a child a food that comes in it's own, built in 'bowl' that seems to make it irresistible to them. These are one of those breakfasts. If your kids love Avocados like mine do, this is such an easy win, really healthy breakfast for them. I also put a little crispy bacon on the top of mine (feel free to leave this out) to make it even more irresistible. As if it needed to be :)

I never used to cook Avocado. Ever. It always seemed like a slightly weird thing to do if I'm honest. As a devoted Avocado fan, I love them so much that I just didn't see the point in cooking them when they're so awesome in their uncooked state. And then I tried it one day. I had a very unripe Avocado and no matter what I did, it wasn't ripening. Rather than toss it in the trash, I tried this. And that Avocado was the first of many that have now been cooked here.

The space the stone leave I think you'll agree, is crying out to be filled, and an egg as it turns out, works perfectly. I will say now, I've not mastered the art of matching up the stones hole in the Avocado to the egg size, so I've had more than my fair share of egg whites that overflow and go all over the avocado.

These days, I've developed a better way. It's a bit longer by about 90 seconds but appeals to the wannabe neat freak in me. I now crack the eggs into a bowl first and then use a spoon to add a yolk only to each one and then top the hole up with egg white. Picky? Perhaps. Visually appealing? For sure :)

Absolutely feel free to ignore this step entirely if you like, it doesn't affect the end breakfast at all :)

The Best Way To Cook Avocado

You can bake your avocado or microwave it. For this recipe, I prefer to microwave. I have tried these in the oven a few times to try and get it right but I can't get the yolk to stay runny while making sure the egg white is cooked through, which is an essential in our house! The microwave seems the best way to get the egg yolk runny as the kids like, so this is how we cook these now.

Cooking the actual avocado itself can be done in the oven or the microwave. I find the flesh of the fruit cooks really fast and I've not noticed any benefit to using the oven over the microwave. Cooking is complete when the flesh is soft and can be scooped out easily. It's not greatly different to a very ripe Avocado, besides being hot :)

How To Make Baked Avocado Egg Boats

Ingredients

• 2 Medium Avocados Halved, stone removed
• 4 Small Eggs
• 2 Rashers Bacon Chopped into small pieces

Instructions

• Halve and stone your avocados
• Break your eggs into a bowl making sure not to break the yolks
• Pan fry your bacon until crispy and set to one side
• Using a spoon, add a yolk to each avocado where the stone once was and then fill to the top with egg white
• Put your avocados on a microwavable plate making sure to get them laying as flat as you can so the egg doesn't spill out
• Microwave for 60-90 seconds until the eggs are cooked to your liking. This will depend on your microwave and the size of your eggs, so check regularly
• Scatter bacon pieces over each avocado and serve immediately
