Cheese and bacon bites: I’m not sure there’s ever been an occasion these aren’t gone in a flash. They’re everything you want in a snack. Cheesy, fluffy, bacon deliciousness.
If I manage to hide a few, they make a favorite lunch box snack. If I’ve got up early enough I pop them in the oven and we have them for breakfast, or one of the kids will help me make a batch in the afternoon.
The smell of bacon cooking never fails to get my lot hanging about round the oven waiting for them to come out. You’ll see why!
Cheese And Bacon Snacks
As a snack, these are a great Real food ingredient keep-you-going kinda snack. They’re filling, so if you’re going to be having a late lunch, these beauties are the breakfast you want.
They travel well, store well and everyones always pleased to see one. I usually make these in a muffin tin, but you can make it in a flat pan you you can slice it up into squares. Add 6-7 minutes to the cooking time if you do this and wait for it to cool down before slicing it.
We didn’t quit sugar when we started eating Clean, but do limit it so it’s not an everyday food. And since these are sugar free, I make them on a frequent basis, and you know, if the kids are gonna eat them I’m gonna make them!
I add a little extra cheese to the top of these before popping them in the oven. I also turn the oven right up for the last couple of minutes of cooking so the cheese becomes crispy and dark in color. There’s something decadently scrumptious about crispy cheese, I think we can all agree :)
Storing
Once cooked and cooled, these cheese and bacon bites will last up to 3 days in an airtight container in the fridge. Make sure they stay in the fridge, because of the bacon in them. If you want them warmed through, simply pop them in a hot oven for 5 minutes or give them a minute in the microwave. That said, they’re also delicious cold.
These freeze like a dream and can stay on the freezer for up to 4 weeks. Defrost thoroughly when you want them and reheat in the oven or microwave, as above. Reheating them in the oven crisps the cheese up again, so if you’ve got time, this is the better way to do it.
Making Ahead
Having a party? Feeding a crowd? These are easy to make a day or two ahead. Bake as many as you need and either freeze or fridge store them until you need them. Easy peasy!
