These No Bake Chewy Granola Bar Bites use only FOUR ingredients and take just minutes to put together. Sweetened with dates, these moorish little bites make the perfect snack when the moment hits!
Chewy Granola Bar Bites {4 Ingredients}
My kids (and lots I’ve known) love to be able to help themselves to snacks and having a jar of these chewy granola bar bites on the surface means they can grab one when the mood takes them. You can make these as little as you like, I use one teaspoon per bite so they’re really quite small, but they fill a snack gap when the kids want something!
I normally only use 4 ingredients when I make up a batch of these, but for today’s recipe (and the purpose of getting a pretty picture) I rolled them in shredded coconut. Most of the time, I skip this step.
So next time you make a cuppa … pour 1/2 cup hot water over a cup of chopped dates. Let it cool for around 10 – 15 min.
Pop dates, oats, peanut butter and seeds into your food processor and whizz. I only do this for around 10 – 15 seconds as I don’t want my bites too smooth. But again, this is up to you. Whizz for a bit longer if you don’t want a crunchy texture.
Roll 1 teaspoon of the mix into a ball. You can roll in coconut or crushed nuts to dress them up and really impress :)
Being whole grains, Oatmeal is a great source of fiber, and the natural flavor of the dates and nuts are the star of the show here. I don’t use any vanilla extract, honey or Maple syrup to add more sweetness, the dates provide enough.
Often the store bought version of these bites are made with corn syrup (a gets a big NO here) or brown sugar, so while dates are still sugar, they’re a FAR better natural alternative to most store bought versions! And they’re delicious!

Soft Granola Snacks
Many Clean Eating recipes call for dates in the ingredients.
It bugs me when I watch a video of someone popping dates into their food processor and 30 seconds later they have a creamy, smooth date mix.
When I do it, my dates shoot around like projectile bullets and I end up with a really lumpy problem. For a while, I solved this issue by using Medjool Dates. They are gorgeously soft, moist and my food processor loves them – but they are helluva expensive.
So I have a little trick that turns your ‘regular ol’ date’ into the perfect substitute. Soaking them in hot water for around 15 minutes lets them reabsorb some lost moisture. It also softens them up so that when you process them, they break apart into a smooth date mix – just like the pros.
Granola bites are quick to make – 5 minutes and you’re done quick.
Additions
Once you have the basic mixture you can make a few substitutions or additions. For a sweeter, although these are already sweet thanks to the dates, you could substitute the nuts and seeds for chocolate chips, or finely chopped fried fruit, keeping the quantities the same. Dried Cranberries work well, as do dried cherries and apricots.
You need to use dried fruit to make these or the moisture from fresh fruit means the bites won’t stay together.
Feel free to use other seeds than I have, Pumpkin seeds are good, pecans and flax seed both work well.

I store my Granola bar bites in either an airtight container or an airtight jar, and being quite pretty, they look lovely piled into a jar and kept on your kitchen work surface. If you’d like the bites to be firmer, you can put them on some parchment paper on a plate in the fridge.
I keep these for up to a week at room temperature, or slightly longer if you’re keeping them in the fridge. You could also keep them in the freezer and take them out an hour or so before you want to eat them.

- ¼ Cup Peanut Butter
- 1 Cup Nuts and Seeds I used walnuts and sunflower seeds for mine
