Chunky Guacamole dip

I like my Guacamole chunky. Big pieces or creamy avocado with crunchy red onion bits, fresh cucumber and baby tomatoes – gently stirred and finished off with a little salt and pepper and a generous squeeze of fresh lemon. OMG!!!! Pure yummy perfection!!!

Ingredients

2 ripe Avocados

1 small red onion, finely diced (about 1/4 cup)

1/4 cup finely chopped cucumber

8 cherry tomatoes, quartered

1 tablespoon freshly squeezed lemon (or lime) juice

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

  1. Peel Avocados and remove the pip.
  2. Chop into pieces and pour the lemon juice over the top. Add diced onion, cucumber, tomatoes and salt and pepper
  3. Mix together until combined. Don’t over mix or the Avocado will start to mash up.
  4. Cover and Refrigerate until ready to use.

Notes

This guacamole lasts up to two days in the fridge but must be sealed to avoid it turning brown.

Serve it as a dip, side salad or as a topping on chicken, fish or potato.
