I like my Guacamole chunky. Big pieces or creamy avocado with crunchy red onion bits, fresh cucumber and baby tomatoes – gently stirred and finished off with a little salt and pepper and a generous squeeze of fresh lemon. OMG!!!! Pure yummy perfection!!!
2 ripe Avocados
1 small red onion, finely diced (about 1/4 cup)
1/4 cup finely chopped cucumber
8 cherry tomatoes, quartered
1 tablespoon freshly squeezed lemon (or lime) juice
1/4 teaspoon salt
1/4 teaspoon black pepper
- Peel Avocados and remove the pip.
- Chop into pieces and pour the lemon juice over the top. Add diced onion, cucumber, tomatoes and salt and pepper
- Mix together until combined. Don’t over mix or the Avocado will start to mash up.
- Cover and Refrigerate until ready to use.
This guacamole lasts up to two days in the fridge but must be sealed to avoid it turning brown.
Serve it as a dip, side salad or as a topping on chicken, fish or potato.
