How To Eat Banana Bread
Personally we love this covered in cinnamon whipped butter and nothing else! I’ve also toasted this in the past and we’ve had it for breakfast with some sliced banana on top and a drizzle of maple syrup. One thing, if you’re going to try toasting this do it under the grill and not in a toaster. The reason for this is that the sugar in the loaf burns quicker than the other ingredients and you’ll be able to toast it not so close to the element if it’s under the grill.

- The best bananas to use are the over ripe ones with the brown spots
- You can substitute the honey for maple syrup or raw sugar
- Double up on the recipe whenever you can and freeze one loaf for later
Banana Bread Additions And Substitutions
There are lots of things you can add to this banana bread:
- Nuts – You could add a cup of chopped nuts to this bread for some extra crunch
- Maple Syrup – You can substitute maple syrup for the honey. The overall flavor will be slightly less sweet
- Flour – I’ve used wholemeal flour in this recipe but you could use Einkorn or Buckwheat if you want a lighter colored loaf
- Cloves – Substituting the cinnamon for ground cloves (or nutmeg) gives you a twist on this classic bread
Storing And Freezing Banana Bread
This bread stores well in a tin so the air can’t get to it. I keep this for 2-3 days only so it doesn’t go dry, although really it’s usually gone before that.
You can freeze this bread too. If you’re going to freeze it, slice it up before you freeze it so you only need to defrost what you need at the time. It can be hard to get the slices apart once they’re frozen so learn from my mistakes and put a piece of parchment in between each slice so you’re not sitting there with a knife trying to prise the frozen slices apart :)

Ingredients
- 4 Medium Bananas Very ripe and mashed
- 2 Large Eggs
- 1 ½ Cup Wholewheat flour
- ¾ tsp Baking soda
- ¼ Cup Butter Melted
- ¼ Cup Honey
- 1 tsp Vanilla bean paste Or vanilla extract
- ½ tsp Cinnamon
- ½ tsp Salt
Instructions
- Preheat oven to Preheat the oven to 350°F (175°C), and butter a 4×8-inch loaf pan
- Add all ingredients into a bowl and mix with a wooden spoon or spatula until just combined. Pour into loaf tin and level
- Bake for 50 – 60 minutes. or until a tester inserted into the centre comes out clean. Check after 45 minutes because oven temperatures can vary
- Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before slicing
