I’m going to get on track this week and step up my Clean Eating Game. 12 weeks till Summer (on my side of the Equator) and that means swimming, shorts, exposed legs (!!!) and no more hiding behind bulky Winter clothes. I don’t like cooking more than I have to, so the Kids will be dragged along for the ride. More veggies will be good for them, anyway.

About the CEWK Meal Plans
- Sunday is my Meal Planning Day. I decide on seven Dinner Recipes, three Breakfast options and the two Baking recipes I’ll be making for the week. You can read more about how I meal plan here.
- I pack lunches for the family Monday to Friday and use my Mix and Match Lunchbox Planner to make this a little easier (you can get it for Free here).
- I bake once or twice a week to keep stocked up on school lunchbox treats and after school snacks.
- The Recipes I make are healthy, real food recipes made from whole food ingredients. I don’t exclude any particular food groups, but I do limit sugar and dairy when possible as my eldest daughter is lactose intolerant.
- I cook from scratch as much as I can but try and keep prep time to a minimum (preferably under 30 minutes).
Clean Eating Family Meal Plan #9
MONDAY
Easy {Freezer} Lasagne – I made a massive pot of bolognaise pasta sauce in the slow cooker on Sunday, which gives me enough to make two huge trays of these easy freezer lasagnas (both of which went into the freezer) PLUS 2 serves of bolognaise sauce for some quick spaghetti bolognaise meals when I need it.
TUESDAY
Avocado and Chicken Quesadilla – OMG! I could eat these every single day! If you have a big family, I recommend getting two pans going at a time or heating up the toasted sandwich maker (coz’ this does an amazing job cooking quesadillas).

WEDNESDAY
One Pan Shrimp and Rice – I made a couple changes to this one, including using Brown Basmati Rice (which is amazing by the way) and adding two cups of sliced vegetables (carrots, cabbage and zucchini). And I skipped out the Parmesan on mine (because Mommy’s wants to look good at the beach this Summer:)

THURSDAY
Clean Eating Tomato Soup (with Toasted Cheese and Pesto Sandwiches) – I recommend making a HUGE pot of Tomato Soup. I thought I had made enough to feed a small army, but the kids ploughed their way through it in two days. It’s study week – and my daughter likes to snack while studying – so hot cups of tomato soup went down beautifully. I skipped on the Sandwiches but made some wholewheat garlic croutons (because I like the crunch texture) and as much soup as I wanted instead. No portion control needed on this one!
FRIDAY
20 Minute Honey Soy Chicken – An Easy and Quick 20 minute dinner option. Great way to use up the weeks vegetables too. Serve with brown rice or rice noodles and sprinkle with sesame seeds.

SATURDAY
Egg Burgers with Mushroom Sauce (for the non fussy family members) – Happy kids all round when we serve these. Homemade Burger Patties topped with salad, a fried egg and an easy three ingredient creamy mushroom sauce. Bliss! For a healthy option, serve with a wholewheat bun.
SUNDAY
Spaghetti Bolognese – Remember the extra portions of Bolognese I made on Sunday? Well time to whip one of them out the freezer. Serve with a side salad and give wholewheat spaghetti a try. If you are new to the wholewheat pasta thing, then cook half wholewheat/ half standard to get the family used to the new texture. Also … I finally did it. I Bought a spiralizer!! It’s a big deal for me as I don’t like cluttering up my kitchen with appliances that I never use. But I’ve been watching this trend for a while and then this one came on special. So far I’ve pretty much spiralized anything that fits in the little tube. Zucchini Noodles are AMAZING!!! And also happen to be what I’m eating in place of pasta with this recipe.
