Roll up, roll up for a Maple syrup mug cake! This little mug of deliciousness is what I make on those evenings when one of us just fancies ‘something sweet’. Cooking one inevitably leads to more requests as the smell of the cake cooking makes it’s way to kids bedrooms: They’re quick, they’re easy and they’re a pantry staple. Yay!
Maple Syrup Mug Cake
I make these mug cakes as single serve recipes. It always starts out the same, we’re watching something on the TV and I make one, then someone asks for another and before you know it, I’ve made a few.
And yet somehow I still find these are still easier as single serves. This maple syrup mug cake is so simple to make. You’d be forgiven for not expecting the fluffiness, the cake-y texture or the flavor.
Of course if you’re making a few straight off the bat then you can just increase the quantities for the amount you’re making.
I think sometimes we expect things to be hard to make as their homemade version – I promise, this is not!
Having made more than my fair share of mug cakes over the years I can tell you that leaving the recipe eggless is the way forward.
I don’t know what the egg does to a mug cake, but they’re better without. I use butter for the fat and coconut sugar for the sweetness with the other regular cake ingredients. I’ve been using Einkorn or white spelt flour for a while now and both of these work well in this recipe but you’ll need a little baking powder so this mug cake gets a good rise.
What’s The Best Mug Cake?
Hmmmm this is such a hard question to answer! Depending on your mood and your cravings when you’re about to make a mug cake, there’s a whole host of flavors and cakes you can make.
Being a maple syrup loving type of family this is a great one to make if you fancy something simple and sweet.
Maple Syrup Mug Cake Sauce
The maple syrup comes into this as a sauce. I use coconut sugar for the cake part of the recipe as I think it gives it a more caramel flavor. You could use maple syrup as the cake part sweetener, but I prefer this with the maple syrup on top.
I also add a teaspoon of date paste, if I have a batch of it made. If I don’t, i chop a date into tiny pieces and add it to the batter right before cooking it. You can leave this out altogether if you don’t have date lovers!
You can either mix the maple syrup with half a teaspoon of vanilla bean paste or just add the maple syrup on top of the mug cake straight from the bottle. Either are yummy and either work perfectly.
Adding the sauce on top of the cake also means that the cake part becomes drenched with the sauce and you end up with a gooey, sticky, sweet cake. I mean really, can you ask for anything more in a mug cake?!

Microwave Mug Cake
Yep, this is cooked in the microwave.
I think this adds to the evening treat type thing this cake has going on. No one wants to be heating the oven and starting to cook in the middle of something good on TV and so the microwave is the way forward for this recipe.
Because of this, the recipe takes just minutes to out together. It’s almost TV advert time make-able, it’s super quick.

There’s a few things you can do to help your mug cake turn out perfectly:
- Grease your mug with a tiny bit of butter or oil before cooking so your cake comes out easily
- The mug you bake the cake in the microwave in will likely be very hot. If it is, you can run a sharp knife round the outside and turn it out into a bowl
- Don’t over mix your batter. Just mix it until it’s combined and no more, this stops the batter becoming too tough
- Leave the mug cake to sit for a minute or two with the maple syrup sauce on top before tucking in. This lets the sauce get all the way through the cake. HmmmMmmm…
How To Make A Maple Syrup Mug Cake
Ingredients
- 2 heaped tbsp Flour Einkorn or white spelt
- 1 tbsp Coconut sugar
- 3 tbsp Butter Unsalted, softened
- ¼ Cup Milk
- 1 tsp Date paste Or one chopped date, optional
- ½ tsp Vanilla bean paste
- ¼ tsp Baking powder
- 1½ tbsp Maple syrup
Instructions
- In a mixing bowl put the flour, coconut sugar and baking powder in and combine it all together
- Melt the butter in the mug you’re using to microwave this cake. This will leave a bit of butter in the mug when you pour it into the mixing bowl and stop the mug cake from sticking
- When the butter is melted (30 seconds) add it to the dry ingredients and put the milk, date paste or dates and vanilla bean paste in too and combine so the ingredients are just mixed. Make sure you don’t over mix at this stage as it can result in a tougher cake
- Put the cake batter in the greased mug and microwave on high for 90 seconds
- Use a tea towel to take the mug out of the microwave as they can get really hot!
- Add the maple syrup on the top and serve!
