Complete Meal on a Stick
Feel free to add whatever you want to your kebab sticks. Beef, Chicken, Seafood or just plain Vegetables. Cut up chunky pieces and get the kids to help you assemble their Meal on a Stick. I like to prep these early in the day and keep them sitting in the marinade in the fridge. They freeze really well too, so make an extra batch to pop in the freezer for another night.
Fun and Healthy
This is a bit of a fun dinner and a great way to introduce new vegetables to your kids.You can substitute the beef for any other meat, but you will have to change cooking time depending on what you are cooking. The best way to get the kids to try new things is to lay out the vegetables in bowls and let them build their own kebab. Half the fun is in the Making and the other half is in the cooking.
How to Host a Mid Week Family BBQ
If eating your dinner on a stick isn’t enough fun, then take it to the next level of awesomeness! Get outside, light up the BBQ and let the kids cook their own (you can grill these in the oven too, but a mid week BBQ definitely spices up the week). If you are using wooden kebab sticks, then just remember to soak the skewers in water for a few minutes before threading your meat and veggies onto it so that they don’t burn during cooking.
We have a little charcoal Webber BBQ which we use at least two to three times a week. Moms,you can make fire! You don’t need to wait for the Dad to come home. You CAN light your own BBQ without chopping wood or even knowing what you’re doing. There are a couple of cheat fire starting hacks available that make this job so much easier.
- Use firelighters. These safe, all Natural (aka chemically free) fire starters are a brilliant invention. Simply place them under your coals and light them with a match. They catch on fire instantly and burn long enough to light the coals. Easy!
- If you don’t have firewood, then opt for a bag of  100% Charcoal lumps.  Make a little pyramid of coal, with a couple blocks of fire starters in the middle. Light and revel in the fact that you just lit the BBQ!
The Honey and Garlic Marinade
This Honey and Garlic Marinade is a fantastic, basic marinade for any occasion. The marinade works well with chicken, lamb, beef and all Vegetable kebabs. Don’t use all of it as a marinade as you will want to keep some back to ‘paint’ on the kebabs as they cook.
The Recipe
Meal on a Stick: Beef & Vegetable Skewers with Honey and Garlic Marinade.
Ingredients
- 500 g Rump Steak Cubed
- Assorted Fresh Vegetables: Onion / Peppers / Zucchini/ Mushrooms / Pineapple - thickly sliced
- 8 Skewers
Marinade Ingredients:
- ½ cup honey
- ¼ cup tamari sauce low salt soy sauce
- 4 cloves garlic crushed
- ½ teaspoon dried or crushed ginger
- 2 tablespoons melted butter.
Instructions
- Preheat your oven or grill.
- Combine all Marinade ingredients.
- Construct your Meat and Vegetable Skewers.
- Pour honey sauce over skewers.
- Cover and allow to marinade for at least an hour.
- Cook on med/high heat until meat is cooked through OR grill on a hot Charcoal BBQ for best results.
