This easy Mexican breakfast burrito is something in between a weekend breakfast and a ‘have-ten-minutes-to-spare’ week day breakfast recipe. It’s really simple, really tasty and a little different from the norm. It’s also filling, so if you need a Clean eating breakfast to see you through ’till the afternoon, try this.

This Burrito’s Vegetarian, but you could easily add some Chorizo or chicken if you wanted to. Same goes for any other ingredients you fancy, burrito’s are essentially simply fillings inside a wrap, so feel free to shake things up :)

Sometimes I make my own wraps for these, or use any leftover from a meal the night before. They don’t take 5 minutes to whip up a fresh batch and they do taste batter than store bought, but more often than not at breakfast time, there’s rarely much time going spare so I use store bought tortilla.
There are some really good, Clean tortilla like these ones, so if you’ve not got time to make them from scratch, that’s fine.
Mexican Breakfast Burrito Recipe
This Mexican breakfast burrito recipe makes enough for 4 people, having one burrito each. You might want to cut one in half for little kids, so adjust the recipe accordingly.
Ingredients
- 4 Clean tortilla – check the packet to make sure they’re Clean if using store bought
- 8 Eggs – Medium
- 1 Orange Pepper – diced
- 1 Red Onion – diced
- 1 tbsp Olive oil
- 8 Cherry tomatoes – quartered
- Half teaspoon Sweet Paprika
- Half teaspoon Ground Cumin
- 1 Avocado – chopped and diced
- 1 1/2 Cups Black Beans – cooked
- 4 Tbsp cheddar – grated
- Cilantro – to garnish
Process
- Fry your chopped onion and peppers in the Olive oil until soft
- Add your spices and cook for a couple of minutes
- While the spices are cooking, whisk your eggs in a bowl, adding 4 tbsp of water. This stops the eggs scrambling too much while you’re cooking them
- Add the eggs to the onions and pepper mixture
- Cook the eggs until their cooked to your liking
- Heat your cooked black beans (microwave for 2 minutes)
- Heat your tortilla and place on plates
- Put your eggs on the tortilla, then add black beans, avocado, tomato, cheese and cilantro
- Enjoy!
