They take 5 minutes (maybe not even that) to whip up and you can sit back and let the oven do the rest. Breakfast bars? Yep. Lunchbox snacks? Definitely. Afternoon slump pick me up? For sure!

These Oatmeal bars have chocolate chips in them. Yep, real chocolate chips (read about why we didn’t give up sugar here), but the sweetness comes from ripe bananas. So while there’s a few choc chips for added Mmmmm factor, these are really healthy bars: Breakfast in a bar if you like!
Feel free to leave the choc chips out if you prefer, the rest of the recipe stays the same. Or change them for sultanas or chopped nuts. It’s a very forgiving recipe so as long as you keep the base the same, you can pretty much add what you like.
The peanut butter gives these bars not only a massive flavor hit, but as a happy peanut butter loving house, anything with peanut butter in it is a hit with the kids. No questions asked, they’re happy. And so these feature pretty often here, and when you’re faced with those crazy mornings when no one’s getting out of bed on time and breakfast looks like it’s not gonna happen, these bars are a Mom win.

When these bars come out of the oven, let them cool down completely and firm up before slicing them into bars. This recipe givens you approx. 12 bars, depending on how big you slice them. They’re filling – being made with Oatmeal and eggs means these are going to keep you going, so I tend to keep these bars smaller rather than bigger.
Once they’re cooled and sliced, put them in an airtight food container like this one and they’ll happily last for 3 days.
How To Make Choc Chip Peanut Butter Oatmeal Bars
Ingredients
- 3 Eggs
- 2 Very ripe bananas
- 1½ Cup Organic Oatmeal
- 3 Heaped Tbs Peanut butter
- ½ Cup Organic choc chips
- 1 tsp Baking powder
Process
- Whisk the eggs in a large bowl
- Add the bananas and mash them with a fork, they need to be mashed, but some small pieces of banana in the mixture are are fine
- Add the peanut butter and combine
- Add the Oatmeal and baking powder and stir to combine it all together well
- Grease your foil or parchment lined baking tray well. This will stick to an unlined and greased baking tray!
- Pour your mixture into the tray and bake for 20 minutes
- Allow the bars to cool and then slice them up

- Add the Oatmeal and baking powder and stir to combine it all together well
