This Sausage Breakfast Bake is a super simple Clean eating recipe that’s packed with flavour, great for breakfast or a light meal.
Sausage Breakfast Bake
Breakfasts. Hmmm….. They’re one of those meals that however organised and prepared and Saint like we try to be, for many of us no matter the planning that goes into it, it’s just hard to make it happen. Early mornings and busy houses make breakfast a challenge which makes breakfasts like this one pretty perfect!
Fresh fruit or a fruit salad make a great grabby breakfast when there’s no time but this is your recipe if you’re looking for something more substantial. It’s a cooked breakfast in a slice. Oh yes! Breakfast casserole recipes are the best!
While you can make this on the morning you plan to have it for breakfast, I’ve gotta tell you I mostly don’t. It really does take very little time to put together, the cooked sausage takes the most prep time, it still does take some time and if you want to have a breakfast ready to go in under 60 seconds, making this the day before and having it ready cut into grab and go slices is the way forward!

If we’re having this for supper I might make some mashed potatoes to go with it or some potato chips to bulk it out and make it more of a meal.
If I’m giving the kids a slice of this protein rich bake in their packed lunches it gets wrapped in some plastic wrap or aluminium foil straight from the fridge and stays cool in their boxes until lunchtime. It’s pretty versatile, once you get used to making the recipe you’ll find it fits nicely into your families recipe routine.

Sausage Breakfast Bake Ingredients
A cooked breakfast in a slice, this sausage breakfast bake is as delicious as it is simple. There’s nothing complicated about making it, and the ingredients are straightforward and things you’ll have or be able to get easily in your local shops.
Sausages
Sausages. When we started eating Clean sausages we’re a bit confusing for me. The kids loved them. We ate them a lot. But they’re not traditionally Clean (whatever that means!) and they’re more processed than I wanted to be eating.
But…..wait for it, it turns out sausages are not all made equal!
It took quite a long time of supermarket searching and then farm shop searching but I eventually discovered I could buy sausages that were over 90% meat, with the rest being egg, bread crumbs etc…and no nasties. It’s not always the case but with sausages, generally, the cheaper they are the less meat they contain. And so now we eat sausages sometimes, if I can get hold of the good ones. And when I see them I stock up!
It’s likely to be a case of hunting around and reading label after label but you should be able to find some somewhere. For this recipe I don’t use any specific sort of breakfast sausage, just whatever I’ve been able to get.
You need to use a sharp knife and slice through the sausage skin to unroll the skin from the sausage meat before you make this. They can be a little sticky, but the skin (usually!) comes off in one piece and then use your fingers to break the meat up before pan frying it with the bacon. This browns the sausage meat before it goes into the bake.
Bacon
Several rashers of smoky bacon, chopped into little pieces and pan fried with the sausage meat before being baked. Making sure of course not to snack on them as they crisp up in the pan!
Red Pepper
I like to add red bell peppers to this recipe. I chop them really small so there’s no big ‘bits’ that the kids will sit and pick out. It adds some extra nutrients and color. Plus they’re sweet. Always good!
As a substitution you could always add a handful of wilted spinach to this instead of or as well as the bell peppers.
Cheese
I’ve used shredded cheese (Cheddar cheese) to make my sausage bake. You could use any malting cheese you like, I find Cheddar the most kid friendly. I say melting cheese as it helps the bake stay together and sets with the eggs, so any full fat cheese your family like will work well.
Make Ahead
I would advise you to make this ahead of time, that’s what I do. I tend to out this together after I’ve made dinner the night before and put it into an already hot oven. Then you can leave it to cool down and put it in the refrigerator overnight.
Of course you can cook this bake and eat it straight from the oven if you prefer to, it won’t be as firm as if it’s fridge cold but really it comes down to personal preference. Either or!

Reheating
If you want to reheat this you can either use the oven, put it into a hot oven for 10 minutes to heat it all the way through and this ay you also get the cheese topping to crisp up again, or you can pop it into the microwave for 2 minutes until it’s piping hot all the way through.
How To Store This bake
This Sausage breakfast bake will stay happily in the fridge for 3 days. It firms up really nicely when it’s cold and so you can simply slice off a piece whenever you want one. Having this in the fridge is also awesome for filling the kids packed lunches in double time!

Ingredients
- 6 Eggs Whisked
- 6 Sausages Skinned and broken up
- 4 Rashers Bacon Smoked, chopped into small pieces
- 1½ Cups Cheese Shredded, Cheddar
- 1 Cup Cottage cheese Full fat
- 1 Bell pepper Diced into small pieces
- 1 Onion Diced finely, optional
- 1 tbsp Olive oil
- Salt and pepper For seasoning
Instructions
- Heat you oven to 190c or 375f and line a baking dish with foil or parchment paper. I also butter the liner to make sure this doesn’t stick
- Heat your olive oil in a large skillet over a medium-high heat
- Add your broken up skinned sausages (see post how to do this) and cook for a few minutes until they start to brown. Add the bacon pieces and cook until browned and cooked through. Add the bell pepper and onion (if using) for the last couple of minutes using a wooden spoon to stir them. Put the pan to one side and allow to cool while you make the egg mixture
- In a large bowl add your eggs and using electric beaters or a whisk, whisk them until the egg whites and yolks are well combined. Add the cottage cheese and combine well
- Season the egg mixture with salt and pepper
- Add your shredded cheese, leaving half a cup for the topping, and combine
- Put the sausage, bacon, pepper and onion mixture into the egg mixture bowl and combine
- Pour your bake mixture into your lined baking dish and using a dessert spoon, spread the mixture out so it’s as even as possible in the dish
- Sprinkle the rest of the cheese onto the top of the bake in an even layer
- Cook for 25 minutes until the bake is cooked through and golden on top. It may be ever so slightly ‘wobbly’ on top when you take it out of the oven. It will firm up as it sets and even more so once you out it in the fridge after allowing it to fully cool
- I leave the bake in the baking dish to cool down. If you want to eat it cold, trying to remove it before it’s set fully may cause it to break up!
- Serve with a teaspoon of dry mustard if you like it!
