These complete dinner sheet pan sausages cooked with potato wedges and veggies make an easy mid week dinner you can get on the table in under 30 minutes, prep time included!

Sheet Pan Sausages
Do your kids like sausages? I'm guessing so since you're here. Mine do too, and so if I'm cooking them I try to add in a few veggies as part of the meal.
This sheet pan sausages recipe is so simple it's really just a few things put together and thrown into the oven and it's perfect for those evenings when you just need to get something in the oven and on the table.

It's those after school times when they've been swimming lessons or some other classes and before you know it it's late and the kids are starving.
Those were the nights we used to go through the Drive Thru (ahmmm...) but these days it's as easy to get something like this in the oven. Assuming I've been shopping of course... :)
While you can make this ahead of time (or at least do the prep to speed it all up) most of the time I'm just not that organised. We have a lot to do, right? Sometimes dinner just doesn't get thought about until, well, dinner time, and you know what? That's okay :)
The flavor I use in this recipe is sweet paprika. It's a mild enough spice to be kid friendly but enough to give the recipe a good flavor. Sausages can be a little bland and so I always feel they need something, and Paprika is it, here at least.
I've included a quarter teaspoon of chilli flakes, absolutely leave them out if you're making this for very little ones or kids with chilli sensitive palettes, you can always sprinkle some more over to serve for those that like chilli.

Are Sausages Clean?
I know there are many many people who eat Clean who don't eat sausages because they're not 100% Clean. And for the most part, they're right, they're not 100% Clean.
However in the interests of trying to eat like this most of the time, I'm prepared to give and take somewhat.
We have a farmer locally to us who prepares and makes his own sausages to sell in the farm shop. They're the highest meat content sausages I've ever been able to find and they when I can get there I usually stock up.
That said you can find some 'fairly' decent sausages in the supermarkets, you just have to have a good look through the ingredients list. And to be honest if it's a case of Drive Thru or using not 100% Clean sausages to make this recipe, just use the sausages you can find. They're likely to be a whole lot better than the take out you might otherwise have had!

What To Serve With Sheet Pan Sausages
I've used carrots and onions in this recipe for the vegetable part. The onions will cook and caramelise and so the kids like them like that, carrots the kids are good with regardless.
You can add in other veggies if you prefer and if your kids are not totally on board with onions, feel free to leave them out and add something else in.
I like to use at least two vegetables in this recipe so I have the option of not adding another side vegetable dish to it, but if you want a side you could try:
- Sticky broccoli
- Quick Clean eating charred corn
- Honey glazed carrots
- Pan fried butter sprouts
- Healthy cauliflower cheese

Prepare Ahead
If you're looking for a dinner recipe that goes straight into the oven the moment you walk through the door, you can prep this ahead fo time and leave it covered in the fridge until you need it.
Although it really doesn't take long at all to get this ready, when every second counts, you may not want to be peeling carrots and potatoes so you can do this up to a day ahead.
Make the recipe right up until all the ingredients are in the mixing bowl, add the paprika garlic and olive oil mix and then leave the bowl in the fridge. Then simply put it onto your sheet pan when you're ready and pick the recipe up from there. Which is basically just cooking it.
Swap Outs
I used onions and carrots, here's some other vegetables you could swap in if you wanted to:
- Peppers - Any color, chop them into thin strips and add to the mixing bowl
- Leeks - Slice into thin rounds and use instead of the onions
- Butternut squash - Cut the squash into small chunks and add to the bowl
- Sweet potato - Use sweet potatoes as an alternative to regular white potatoes
Leftovers
Leftovers of this recipe are awesome! Yep, it's true, they're a great lunch the following day, pack any leftovers up into lunchboxes (I love these glass containers) and eat them hot or cold.
If you want to reheat these sausages simply pop them into the microwave and reheat them on high for a couple of minutes. Make sure they're piping hot throughout before serving them.
Storing Leftovers
You can keep these leftovers in the fridge for up to two days as long as the use by date on your sausages has 2 days on them.
I keep leftovers in the fridge covered with food wrap and then use them for lunches as I need them.
