Sometimes the simplest things are the best, right? I don’t make simple mushrooms on toast for breakfast (or lunch or dinner!) nearly enough, but every time I do, I make a mental note that firstly, it’s just delicious and secondly to make it more often.
And then I forget. So when my lovely neighbour bought these King Oyster mushrooms over, I knew exactly what I was going to do with them!

Breakfasts don’t get much simpler than this. Buttery mushrooms and runny poached eggs on toast.
Of course, you can use any mushrooms you have for this and I was given these King Oysters, but I’d definitely recommend them: They’re really ‘meaty’ and filling, and have an almost fairytale look about them. And this has turned out to be a great incentive for the littler kids to decide they love them. I’ll take it :)
How To Cook King Oyster Mushrooms
I like to keep things easy and simple, so in this house, these are sliced down the length (purely because I love the shape!) and fried in hot butter. I throw some chopped parsley on them when they’re cooked. And that’s it.
I slice these in fairly thick slices so they’re pretty substantial, and you could if you wanted to, add a little garlic to these, although I leave it out as two of the kids are not fans.

Mushrooms, Crispy Bacon & Poached Eggs On Toast
This breakfast is pretty self explanatory, here are the steps to putting it together.
This makes enough for 4 people:
Ingredients
- 8 King Oyster mushrooms – if you’re using regular mushrooms, like Chestnuts or that sort of size, you’ll want to double up the amounts, as the Oysters are pretty big compared to Chestnut mushrooms
- 6 Rashers of smoked bacon
- Eggs – 1 or 2 each
- 4 Slices chunky wholegrain bread for toasting
- 2 tbsp butter
- Chopped parsley
- Salt & Pepper
Process
- Put a pan of water on to boil for your poached eggs – How to poach the perfect egg
- Heat your frying pan like this one to a medium heat and add your butter
- Slice your mushrooms
- Once the butter is melted and sizzling, add the mushrooms and make sure they’re all coated in butter
- Cut the bacon rashers in to small pieces
- Put your eggs in the pan to poach
- While the eggs are cooking, fry the mushrooms until they’re tender and fully cooked, and then add the bacon to the pan with the mushrooms. The bacon will cook very fast in the butter as the bacon fat melts. Cook the bacon until it’s crispy enough
- Toast your bread
- Add your mushrooms and bacon on top of the toast, add your poached eggs and sprinkle with parsley
- Enjoy!
