It’s Summer time and the Strawberries are here! This Strawberry slice recipe is easy to make, perfect for afternoon snacks in the garden on a sunny afternoon and doubles up as an easy lunchbox filler.
Strawberry Slice Recipe
Looking for a light, sweet, moist and super easy to make snack? Try this Strawberry slice recipe, I think you’re going to love it because really, who doesn’t love a strawberry dessert type sweet treat during the Summer!
Is there another fruit that screams Summer quite like Strawberries do? The sweetness of these little sun ripened berries makes them super kid friendly and since we mostly all like a snack now and again, Strawberries are a pretty perfect fruit to use in your snacks.
I often make these if I know the weathers going to be good and we’ve got people coming over, they look so pretty and they’re light and moist, sat on an outside table they’re almost irresistible :)
Summer Fresh Strawberry Bars
I cut these into bars, you can get about 8-12 out of this recipe depending of course on the size you cut, but also bake these in muffin papers if you wanted to and turn them into cupcakes!
Kids seems to love a cupcake, so if you have fussy eaters perhaps think about making them in a muffin tin, just to add to the kids appeal!

Simple ingredients you’ll likely have in your pantry, and baked in under 20 minutes:
Strawberries
Fresh Strawberries are needed in this recipe.
The moisture in them is released when you bake this slice, and while I’ve tried using frozen strawberries, as with a lot of baking recipes, there is way to much moisture in them and the Strawberry slices end up to wet.
Ground almonds
I’ve used ground almonds in this recipe: The light almond flavor goes really well with the strawberries and keep these bars really moist.
You can buy ground almonds in the baking section of most supermarkets but you can also use a Nutribullet or a food processor to grind whole almonds into a fine grain ‘flour’.
Chocolate chips
White chocolate chips seem lighter to me (i know, I know, they’re not at all!) and that’s what I like to use in this recipe. Equally, milk or dark chocolate chips work just as well. Use whichever you and your gang prefer!
I’ve added the choc chips into the recipe but you could also leave them out and then melt then and drizzle the melted chocolate over the top after the bake has completely cooled down.
Maple Syrup
I’ve used maple syrup as the sweetener for this recipe but you could use honey if you prefer. Make sure the maple syrup is 100% pure syrup, there are many artificial syrups that are maple ‘flavored’ and these are usually full of refined sugar: Avoid these!

There are a few things you could switch up in this recipe without changing the core bake.

- Raspberries
- Jam – half a cup of jam turns this recipe into more of a pudding recipe. It doesn’t set into bars as well as it does with fresh fruit, but you get a pudding that’s totally delicious and great with a little custard!

Storing These Strawberry Slices
Should you find yourself in the unlikely position of having any of these left over they store beautifully.
Keep them in an airtight container and they’ll keep well without drying out for up to 3 days. I don’t keep these in the fridge, the cupboard if just fine and you’ll find they become more fudge like and gooey over time. Which honestly is awesome :)
How To Make A Strawberry Slice
Ingredients
- 1 Cup Ground almonds
- ½ Cup White spelt flour
- 1 tsp Baking powder
- 1 Egg
- ½ Cup Butter Melted
- 1/3 Cup Maple syrup Or you could use honey
- 1 Cup Strawberries Fresh, hulled and sliced
- ½ Cup Chocolate chips I used white chocolate
Instructions
- Heat your oven to 190C or 375F and grease an 8 inch brownie pan either with butter or parchment paper so you can release the bake easily once it’s cooked
- In a large bowl add the flour, baking powder and ground almonds and combine
- In a separate bowl whisk your egg and add the melted butter and combine. Then add it to the flour bowl and mix well. Add the maple syrup. You can use an electric mixer, blender or wooden spoon, as long as the mixture is well mixed!
- Hull and slice your strawberries and chop them finely. Add them to the bake mixture and gently combine. Add the choc chips and lightly mix through the mixture
- Spoon the mixture into the greased pan using a rubber spatula to make sure you get all the batter out and flatten out the top
- Bake for 18-20 minutes until the top of baked golden and a sharp knife inserted into the middle of the bake comes out clean
- Once the bake is cooked leave it in the tin to cool down before transferring it to a wire rack to completely cool. When the bake is cold you can cut it into slices
