Having a couple of jars of good quality pasta sauce in the pantry is a must if you have kids and busy weeknights. Feel free to make your Pasta Sauce from scratch however, I’ve learned to take a few clean eating shortcuts to keep me sane during the week – and cooking with pasta sauce in a jar is one of them.

This is an easy recipe that requires very little skill, particularly if you are using store bought tortillas. It’s just a case of making your chicken enchilada mix and then assembling your tortillas and baking. Easy! You can’t go wrong with a stir fry. It’s fast. It’s healthy. And easy to clean up. Aim to cook at least one stir fry a week. Pick a night and make it a regular thing. This honey, soy and sesame chicken stir-fry hits the spot. Every time :)
