Turkey Bacon Egg Bites
Busy school mornings? Time getting away from you? Egg muffins for breakfast are a brilliant stand by and making a batch ahead means you’re always going to have a protein heavy (to keep tummies from rumbling!) breakfast on hand for those mornings when…well, you get it!
I don’t keep these exclusively for breakfast either, they’re picnic food, lunchbox fillers, after swimming and the kids are ravenous muffins, anytime snacks really.
Being made primarily from eggs and cottage cheese the protein content is high and since protein helps keep us feeling full, these are a great kid friendly food. Plus, containing cheddar cheese ensures they eat them. Clever Mom :)
The cottage cheese in this recipe is blended. Mine have, ahem..on occasion, objected quite forcefully to the ‘lumps’ in cottage cheese. While I love it as it is, the lumps can be off putting to smaller kids (and bigger ones for that matter) and I tried these without blending the cottage cheese and the kids noticed. So blended it is.
I like to make egg muffins, or egg bites right in the muffin tin rather than using paper liners which the egg can sometimes stick to. You’ll need to grease your muffin tin really well. Doing so means they’ll slide out easily and in one piece and makes the clean up job a lot easier!
Butter is my preferred way to grease the muffin tin holes but you could also use a little olive oil.

Turkey Bacon
Turkey bacon is something I discovered a while ago and I was stumped as to what it actually was to begin with! I use it as an alternative to real pork bacon sometimes, and rather than being made from one piece of meat (as pork bacon is) turkey bacon is made from several parts of the animal and then pressed into thin strips and becomes the product we see on the shelves.
Now I will say, it’s not 100% Clean. Bacon in itself isn’t 100% Clean but in the interests of adding flavors I know my kids love to foods I was unsure if they’d otherwise eat (especially at the start of our Clean eating journey) I give a little now and again.
Like many foods there are different levels of quality of the same thing and turkey bacons no exception. Where I live you can buy an Organic turkey bacon that’s made into bacon using only natural ingredients and they company that produce the bacon rear the turkey with no antibiotics or synthetic hormones.
Have a look at what’s on offer around wherever you live, you may well find a similar food, it’s become quite popular in recent years as an alternative to pork. If you’re struggling to find a good one, you can always use regular turkey pieces in place of the strips of bacon.

Additions
Once you have your egg and cottage cheese base you can switch and swop the fillings. Here’s some other ideas if you fancy trying them:
- Red bell pepper – Swop out the tomato for red peppers
- Try different cheeses – Generally I stick with a cheddar, but Gruyere, parmesan, Monterey Jack or even stronger cheeses make nice additions of your kids like them
- Throw in a handful of spinach or green onions for extra nutrition
- Kids like broccoli? Add in a little cooked broccoli and feel like super Mom when you wave them off knowing they’ve had broccoli for breakfast!
Storing Turkey Bacon Egg Bites
These turkey egg bites will stay happily in the fridge for 2-3 days if you need them to. I keep them in an airtight container and they stay fresh. If I know I’m making these to be eaten ahead of time I’ll freeze them, they freeze beautifully and can stay in the freezer for up to a month.
Before freezing, make sure your muffins are totally cold and then place them with some parchment paper separating them. This makes them easy to take out individually as and when you need them. To thaw, simply place them on a plate overnight in the fridge and they’re good to go in the morning.
If you prefer your egg bites warm you can always pop them into the microwave for 50-60 seconds to heat them through.

Ingredients
- 3 Eggs
- 4 Rashers Turkey bacon Cut into small pieces
- ¾ Cup Cheddar cheese Shredded
- ½ Cup Cottage cheese I used full fat
- ½ Onion Diced into very small pieces
- 3 Small Tomatoes Diced into very small pieces
- Salt and black pepper To Season
- 1 tsp Butter Melted to grease the muffin tin
Instructions
- Heat your oven to 190c or 375f and grease a muffin pan with a little melted butter
- Cook your turkey bacon until cooked through and then put to one side
- Chop your onion and tomatoes, add them to a bowl and add the cooked turkey bacon and lightly combine
- Using a Nutri-bullet or processor, blend the cottage cheese and egg and season the egg mixture well. Pour this into a mixing bowl and then add the grated cheese and combine
- Divide the tomato, onion and turkey bacon mixture into the muffin pan holes and cover with the egg mixture
- Bake for 10 – 12 minutes and then leave to cool down and firm up for 20 minutes before running a sharp knife around the outside and gently removing them from the muffin pan
- Either eat these warm or allow them to fully cool before serving
