Easy to make healthy Lamingtons. Only 4 whole food ingredients and a couple minutes in the food processor. Seriously simple, but really tasty and perfect for the school lunch box.

Ingredients
2CupsDried dates
1CupShredded coconut
½CupRaw or roasted cashew nuts
¼CupCocoa
Instructions
Add all ingredients to the food processor and process of medium speed for around 1 minute.
Slowly add up to a ¼ cup of water to bind it all together. I add this in two or three stages as sometimes I use a little less water if my dates are moist. Too much water will make your bars sticky
Prep a baking pan with non stick paper and tip the processed mix into the pan. Lay another piece of baking paper on top and flatten with your hands (this just stops the mix sticking to your fingers)
