This easy Mexican breakfast burrito is something in between a weekend breakfast and a ‘have-ten-minutes-to-spare’ week day breakfast recipe. It’s really simple, really tasty and a little different from the norm. It’s also filling, so if you need a Clean eating breakfast to see you through ’till the afternoon, try this.

Ingredients
4Tortilla wraps
8Eggswhisked
1Avocado
1½Cups Black beans Cooked
8Cherry tomatoes Quartered
½tspGround cumin
½tspSweet Paprika
1Red Oniondiced
1Orange pepper diced
4tbspCheddargrated
Cilantro to garnish
Olive oilto fry with
Instructions
Fry your chopped onion and peppers in the Olive oil until soft
Add your spices and cook for a couple of minutes
While the spices are cooking, whisk your eggs in a bowl, adding 4 tbsp of water. This stops the eggs scrambling too much while you’re cooking them
Add the eggs to the onions and pepper mixture
Cook the eggs until their cooked to your liking
Heat your cooked black beans (microwave for 2 minutes)
Heat your tortilla and place on plates
Put your eggs on the tortilla, then add black beans, avocado, tomato, cheese and cilantro
