This healthy cheeseburger soup is a fun twist on standard cheeseburger soup. Our kids go crazy for it!

Ingredients
½lbGround beef
2Large Potatoes Waxy, peeled and diced into small pieces
1tinFinely diced tomatoes
1tin Beef stock Make it up in the empty tomato tin
1tin Corn Unsweetened, drained
1medium OnionPeeled and grated
1knobButter To brown the onion
1tspOregano
½tspOnion powder
Salt & black pepper To season
Cheddar cheese To serve
Instructions
In a large pan, heat your butter over a medium heat until it's melted and then add your onion and sauté it for a couple of minutes making sure not to burn it
Add the ground beef to the pan and break it up, stirring it occasionally until it's cooked through. Season well with salt and black pepper. Turn the heat down if it's browning too much
Measure out your Oregano and onion powder and then sprinkle it them the ingredients. Cook them for 2 minutes
Pour in your diced tomatoes and then use the can to make up one can full of beef stock/broth. Pour this into the pan and combine with the other ingredients
Add in your drained corn
Add ½ tin of water to the pan and then add your peeled and chopped potatoes and then combine all your ingredients well. Get the heat to a point where your soup is simmering and then leave it to cook for 30 minutes, stirring occasionally
Divide the soup into bowls and serve with your shredded Cheddar cheese
