Ingredients
4White Fish Fillets
4Soft tortillasOr 8 x small tortillas
2CupsFresh coleslawOr finely shredded vegetables or salad
Fish Taco Sauce
⅓cupGreek yogurt
1TbspsOlive oil
1tspDijon mustard
2tbspLemon or lime juice
½tspCrushed garlic
Sea salt and fresh ground black pepperTo taste
Instructions
Heat a pan on the stove. Add a teaspoon of olive oil and lightly fry your fish fillets until golden on each side. Season with salt and pepper and set aside
Warm your tortillas in the oven (or microwave). Wrap them in parchment paper to prevent them drying out
Prepare your shredded salad
Make up the fish sauce by mixing all fish sauce ingredients together in a bowl
Assemble your fish taco: Add a handful of vegetables to your tortilla, grilled fish fillet and a teaspoon (or more) of sauce. Serve immediately
