Instructions
Bring a pot of water to the boil, add 1/2 teaspoon salt. Once water begins to boil, add peeled and chopped potatoes. Boil for 20 - 25 minutes until soft. Drain and set aside, leave uncovered to allow all water to evaporate from potatoes. Heat a pan on the stove, add olive oil and diced onion. Fry at medium heat for 5 - 8minutes until onions are soft and slightly caramelized. Stir in crushed garlic and chopped green beans.Saute for around three to five minutes until beans are tender but still a little crunchy. NOTE: This will depend on your preference as to how crunchy / soft you like your beans. Stir in the cooked potato, butter and season with salt and black pepper. Sautee for a further two minutes and use a wooden spoon or spatula to gently combine all ingredients. Serve warm.
