Ingredients
Chickpea Salad
2cansChickpeasdrained, rinsed
½cup Cucumberfinely chopped
½cupBaby tomatoeschopped into halves or quarters
¼cup Red pepperfinely chopped
¼cupkalmata olivespitted, sliced
¼cupred onionfinely chopped
¼cupfeta cheesechopped or crumbled
¼cupcornfresh or frozen
Salad Dressing
1 tbspolive oil
1 tbspapple cider vinegar
2tbslbalsamic vinegar
1teaspoonhoney
1teaspoon garliccrushed
1teaspoondijon mustard
Instructions
Assemble your Salad in a large mixing bowl
Drain the chickpeas and rinse them under cold water.
Prep,chop and slice all your veggies.
Add your feta cheese.
Make the Dressing
Add all dressing ingredients to a jar and shake it up well. Pour over the salad and combine.
