I’ve been making this healthy chicken stroganoff dish for years and it’s one of the recipes that’s part of our families regular dinners. It tastes like way more work than it is: I’ve made this for dinner parties and made this when time’s short, either way it always turns out good and the kids love it.

Ingredients
3-4Chicken breastsButterflied, sliced thinly, change the amount of chicken to suit your family
3cupsMushrooms Quartered
1large Onion sliced thinly
2 tbspOlive oil
2tbspFlourBuckwheat or similar
1½tspSweet paprika Ground
1½cupsBeef stock Fresh
2tbspSour cream
ParsleyTo serve

Instructions
Heat the olive oil over a medium heat on the cooker top and brown your chicken for 5 minutes
Add the mushrooms and onions, stir to combine and cook for a further few minutes until they're starting to become tender
Season the chicken, mushrooms and onion well
Add the flour and sweet paprika and combine well so all the flour and paprika is combined with the food. The mixture will become a little 'gluey'. Cook for a couple for minutes
Add the beef stock and stir in well until the flour and paprika are combined with the stock
Turn the heat down and let the sauce cook for 7-8 minutes. The sauce will thicken
Take the pan off the heat and stir in the sour cream
