Ingredients
4MediumPork tenderloinsRoughly ¾ inch thick
2½CupsMushrooms Peeled and sliced
¼CupButterSplit into 2 portions
1CupBeef stock Sodium free
¾CupCream
2tbspThyme
Salt & pepper To season
Instructions
Add half the butter, a good pinch of salt and pepper and the Thyme to a skillet and heat until the butter is sizzling
Place your tenderloins in the pan, and leave for 3 minutes
Turn the tenderloins over and cook for another 3 minutes and then remove from the pan and put to one side
Add the rest of the butter to the skillet. Then add the mushrooms and with a wooden spoon, scrape the bottom of the pan and mix with the buttery mushrooms. Cook the mushrooms until they're fully cooked
Add the stock, combine. Cook for a minute or two and then add the cream and fully combine
Simmer the sauce for 2-3 minutes until thickened
Place the tenderloins back in the skillet and let keep simmering for a couple of minutes
