These Lemon Curd Bars are an occasional treat for us. They’re easy to make, use a Lemon Curd recipe you can find here and need no baking! I use an oatmeal base for a crisp crumb and then use cream and lemon curd to create a fresh, lemony bar, perfect for when you need something sweet!

Ingredients
Oatmeal Base
1¼cupsOatmeal Bended to a flour
¼cupButter Softened
4tbspMaple syrup
Topping
1Batch Lemon curd See post for recipe
1¼cups Soft cheese Full fat
¾CupHeavy cream Whipped
Lemon zest to serve
Instructions
Line a 9inch square tin with parchment
Whizz your oatmeal until you have a rough flour
Add the softened butter to the oatmeal, add the maple syrup and press into the tin firmly. Refrigerate for a couple of hours
Whisk the soft cheese to loosen it, and then combine with the lemon curd
Fold in the whipped cream, and smooth over the refrigerated oatmeal base
Set in the fridge for at least a couple of hours, or over night if you have the time
