2Medallions BaconChopped into small pieces
ΒΌCupCheeseCheddar
1tspOlive oil

Instructions
Heat the olive oil in a. small frying pan until the oil is hot
Add the bacon pieces and cook through
Season the eggs with a tiny bit of salt and add to the pan, keeping the bacon in the pan when you do so. Leave for 30 seconds to start to cook
Using a wooden spatula, gently move the egg from the sides of the pan into the middle, letting the raw egg spill into the space created and repeat until there is no more raw eggs to move to the centre
Using the rubber spatula, flip the omelette over. Add the cheese on top and fold your omelette. Cook for another 30 seconds
