Ingredients
3Eggs
4Rashers Turkey baconCut into small pieces
¾CupCheddar cheese Shredded
½CupCottage cheese I used full fat
½Onion Diced into very small pieces
3SmallTomatoes Diced into very small pieces
Salt and black pepper To Season
1tspButter Melted to grease the muffin tin
Instructions
Heat your oven to 190c or 375f and grease a muffin pan with a little melted butter
Cook your turkey bacon until cooked through and then put to one side
Chop your onion and tomatoes, add them to a bowl and add the cooked turkey bacon and lightly combine
Using a Nutri-bullet or processor, blend the cottage cheese and egg and season the egg mixture well. Pour this into a mixing bowl and then add the grated cheese and combine
Divide the tomato, onion and turkey bacon mixture into the muffin pan holes and cover with the egg mixture
Bake for 10 - 12 minutes and then leave to cool down and firm up for 20 minutes before running a sharp knife around the outside and gently removing them from the muffin pan
Either eat these warm or allow them to fully cool before serving
