Heat your oven to 200c or 390f and allow it to heat up
Take a piece of parchment paper and line a small baking tin. Add the chicken breasts to the tin making sure the paper is intact to keep all the juices in
In a small bowl add the honey and 1 tbsp of BBQ spice mix and combine well. I used clear runny honey. If your honey it very thick you can heat it for 10 seconds in the microwave to loosen it before mixing your spices in
Mix the honey and spices
Using a pastry brush, brush the honey BBQ mix over the chicken breasts
Bake for 15 minutes and then remove from the oven, turn the chicken breasts over and cook for another 10 minutes. Make sure the thickest part of the chicken is cooked through
Remove from the oven and allow to rest for at least 10 minutes, this helps to keep the chicken juicy
