A healthy and delicious spin on a classic banana bread recipe. Makes 10 generous slices to pop into school lunchboxes.

Ingredients
3ripe bananasto make up around 1 cup mashed banana
2eggslightly beaten
½cupfull fat plain greek yogurtI use one little yogurt pot of 120 g
4Tablespoonsof honey
1teaspoonof vanilla extract
1teaspoonbaking soda
1 ½cups100% whole wheat flour
1cupblueberriesfresh or frozen
Instructions
Preheat the oven to 350'F / 180'C
Prepare a loaf pan by greasing sides or lining with baking paper.
In a mixing bowl, mash bananas. Mix in the eggs, yogurt, honey, vanilla.
Add baking soda to the mixture.
Fold in flour and mix together (just until mixed)
Add blueberries by gently fold through. Don't over mix as the batter turns mighty blue and ends up looking like something out of the Smurfs Movie.
Pour the batter into prepped loaf pan.
Bake for about 50 - 60 mins, or until a toothpick comes out clean from the middle of the bread. (Check regularly from around 50 minutes as some ovens may cook differently). My oven takes a full 65 minutes to bake my loaf.
Allow to cool for at least 15 - 20 minutes before serving.
Notes
If you're using frozen blueberries, wait for them to thaw and drain away an excess moisture.
Use baking paper to line your loaf tray as it makes it easy to remove from loaf pan to place on a cooling wrack.
