Ingredients
3Large Eggs
1½Cups FlourBuckwheat, white spelt, einkorn
1tspBaking powder
1 CupButter Unsalted, room temperature
1¼CupsCoconut sugar
1½tspVanilla bean paste
2Cups Heavy cream Whipped
6Strawberries Sliced into hearts
1tbspWhite choc chips For decoration, optional
Instructions
Turn your oven on to heat up, to 190° and line a 12 hole muffin tin with muffin papers
In a large mixing bowl beat the eggs and coconut sugar with electric beaters until the muffin mix is light and fluffy
Then put the butter and vanilla bean paste into the egg and sugar mix and beat again for a couple of minutes
Add the flour and baking powder and use a wooden spoon to combine them, trying not to 'over mix' and only until all the flour is combined
Divide the batter between the muffin liners and bake in your oven for 12-14 minutes, until golden on top and cooked through. Allow to cool fully
While the muffins are baking, use the beaters to whip the cream and store in the fridge until you're ready to use it
Once the muffins have fully cooled, slice them a little across the top to you have a flat surface. You just need to take off the 'peak' of the muffin
Using a piping bag, pipe the cream onto the top of the muffins
Hull the strawberries and slice them from top to bottom once, starting in the centre. The slice again, with the hulled part of the strawberry forming the 'v' of the heart. Top each muffin with a strawberry heart
