Whisk your eggs really, really well and then season with salt and pepper
Add a tiny piece of butter to your crepe pan and melt it over a medium heat
when the butter is sizzling, add one egg's worth of mixture to the pan and use a crepe spreader to move the mixture around the pan until the whole pan is covered
Let the mixture cook without touching it for 30 seconds
Using a silicone spatula gently work the wrap away from the pan and flip it and then cook on the other side for another 30 seconds
Fill with your prepared topping and serve immediately
