Roll up, roll up for a Maple syrup mug cake! This little mug of deliciousness is what I make on those evenings when one of us just fancies 'something sweet'. Cooking one inevitably leads to more requests as the smell of the cake cooking makes it's way to kids bedrooms: They're quick, they're easy and they're a pantry staple. Yay!

Ingredients
2heaped tbspFlourEinkorn or white spelt
1tbspCoconut sugar
3tbspButterUnsalted, softened
¼CupMilk
1tspDate pasteOr one chopped date, optional
½tspVanilla bean paste
¼tspBaking powder
1½tbspMaple syrup
Instructions
In a mixing bowl put the flour, coconut sugar and baking powder in and combine it all together
Melt the butter in the mug you're using to microwave this cake. This will leave a bit of butter in the mug when you pour it into the mixing bowl and stop the mug cake from sticking
When the butter is melted (30 seconds) add it to the dry ingredients and put the milk, date paste or dates and vanilla bean paste in too and combine so the ingredients are just mixed. Make sure you don't over mix at this stage as it can result in a tougher cake
Put the cake batter in the greased mug and microwave on high for 90 seconds
Use a tea towel to take the mug out of the microwave as they can get really hot!
