I've been reading The Little Book of Hygge (which I recommend to anyone who wants to make their home feel more ... well .. Hygge). The concept behind the word is hard to explain, because it's something that needs to be felt. But I get it. Home is Hygge. Dim Candle lit rooms are hygge. And there is something magically 'Hygge' about snuggling by the fire, turning down the lights and sipping on a hot cuppa soup.

Clean Eating Soup
OK, so not all these soups are slow cooking. Some of them can be whipped up in a couple of minutes, while others need a couple hours of slow simmering to release their flavors. Personally, I love the whole 'soup cooking in the slow cooker' thing.
I dump all ingredients in the pot before heading out in the morning and come back a couple hours to a home smelling amazing and a dinner that basically cooked itself.
