When you have finished making these, promise me that you will come back and let me know how good they were. I’m pretty confident the whole family will LOVE these Ginger Ninja biscuits. They are soft, chewy and sweetened with a DIY Date puree (you have got to try this!).
Ginger Ninja Cookies
Love ginger? Us too. When we started Clean eating I needed to find flavors that could make the food I was making not bland.
One of the things about heavily processed foods is that if you’re used to eating them, they contain so many additives that you become very accustomed to the ‘fake’ flavors that they’re full of and so when you start to eat Real food, the flavors can seem muted.
Hello ginger! Ginger is one of those spices that can be used in baking and cooking, and just gives the food a ‘pop’ of flavor.
If you’re big ginger fans, have a look at these:
The beauty of this recipe is that all ingredients are popped into the food processor and it does the work for you. You can either bake immediately or spoon the dough into some cling wrap and store in the fridge or freezer until you need it.
Date Sweetened Cookies
These cookies are sweetened with date paste which you can find the recipe for here.
How this stuff is not sold in every shop in every corner of the globe is beyond me, really.
For a start it’s so good you could literally spoon it straight out of the jar and into your mouth. But assuming you’ve not done that, go ahead and use it in these cookies, it makes they soft and gooey, and just well, perfect.
I like to make up a batch if date paste and keep it in the fridge. It’ll last for a couple of weeks in an airtight jam jar after you’ve made it.
How Long Do These Last?
You can keep these cookies in an air tight biscuit container for about 3 days. As long as they’ve kept their softness they’re fine to keep for a little longer than this too.
