Healthy Apple Mug Cake
This isn’t really a cake at all, but I think of it the same as other mug cakes like this chocolate one. If it’s cooked in a mug in the microwave and is something I make when those pesky cravings hit, then in my head it’s a cake. Even though it’s more of a mug apple crumble. But hey! It’s pretty awesome.
I’ve put the recipe for one serving, so if you’re making it for more than one person simply multiply the recipe for however many you’re making these for. It’s not huge and so smaller kids can easily manage one each.
Although this is more of a snack kinds thing, there’s absolutely nothing to stop you making this for breakfast, and it does indeed make a pretty decent breakfast. The crumble topping is made with oatmeal which I like the kids to have for breakfast as it’s a higher protein grain than other grains and so it keeps them going until snack time on a school day. The only reason I don’t make this more often for breakfast is because peeling the apples is often takes more time than I have. I guess it depends on how many kids you’ve got!
There’s a healthy dose of cinnamon in this. I use one full teaspoon per mug, of course feel free to adjust this to your tastes, or leave it out all together. Apple and cinnamon is a match made in heaven as far as my kids are concerned and so it’s a set in stone rule for us that they go together here.
You could substitute the apples for pears in this recipe. The fruit takes only a few minutes to cook in the microwave and so as long as you use a fruit that is fairly heavy in water content, you could use it instead of apples.
Which Apples To Use
The sweeter the apples you use the sweeter the mug cake will be. I’ve used Pink Lady apples here. Red apples tend to all be sweet while green apples can be either sweet or sour. So if you have a choice go for red apples. The only apples that won’t work at all are cooking apples. If you use these, you’re likely to have some miserable faces looking up at you when you serve this!
Cooking Tip
When you’re slicing the peeled apple, make sure you slice the apple wedges quite thin. Each quartered wedge should be then cut into 3 pieces really to make sure it cooks quickly in the microwave.
