These Lemon Curd Bars are an occasional treat for us. They’re easy to make, use a Lemon Curd recipe you can find here and need no baking! I use an oatmeal base for a crisp crumb and then use cream and lemon curd to create a fresh, lemony bar, perfect for when you need something sweet!
Lemon Curd Bars
Cream and lemon curd on a oatmeal base. Yep, these delicious bars are a pretty awesome snack, a once in a while snack, but yummy all the same! I call these lemon curd bars simply because I use lemon curd in the topping, but really they’re a far creamier version, with less tang then a curd and more mellowness!
There’s no a lot to these bars. I use Real food ingredients: heavy cream, soft cheese, and lemon curd to make the topping, and a simple Oatmeal and butter base. I add a little maple syrup to the base for a touch of sweetness, but you can leave this out and substitute it for extra butter if you prefer to.

There’s not a whole lot to these bars, just a few ingredients and some time spent in the fridge setting.
Base
The base for these lemon curd bars is made from oatmeal blended into a flour, combined with butter and a little maple syrup and then set in the fridge.
Topping
The creamy lemon topping uses this lemon curd, soft cheese and heavy cream. That’s it. The cream is whipped and so helps keep the topping firm, and it has an almost cheesecake like texture to it. I let this set overnight most of the time, but if you’re in a hurry, a few hours will do so long as the topping is set :)
Storing These Bars
Once these bars are made, you can keep them in the fridge, for up to two days. I use an air tight container to store these as food cover tends to stick to the topping.
These need to be kept refrigerated because of the sift cheese and cream used.

How To Make Lemon Curd Bars
Ingredients
- Oatmeal Base
- 1¼ cups Oatmeal Bended to a flour
- ¼ cup Butter Softened
- 4 tbsp Maple syrup
- Topping
- 1 Batch Lemon curd See post for recipe
- 1¼ cups Soft cheese Full fat
- ¾ Cup Heavy cream Whipped
- Lemon zest to serve
Instructions
- Line a 9inch square tin with parchment
- Whizz your oatmeal until you have a rough flour
- Add the softened butter to the oatmeal, add the maple syrup and press into the tin firmly. Refrigerate for a couple of hours
- Whisk the soft cheese to loosen it, and then combine with the lemon curd
- Fold in the whipped cream, and smooth over the refrigerated oatmeal base
- Set in the fridge for at least a couple of hours, or over night if you have the time
- Cut the bars into 9-12 slices and serve!
