Brussel sprouts: You either love em’ or hate em’ and I’m guessing since you’re here, you’re a sprout lover. Or maybe at the very least you’re looking for a way to not hate them. Well, these Brussel sprouts fried in butter are simply the very best way to eat them!

Brussel Sprouts Fried In Butter
I know not everyone loves Sprouts.
They’re one of those vegetables that can be near on impossible to get the kids to eat.
My advice? If they’ve tried one and didn’t like it, let it go. One of mine is never going to be a Brussel Sprout lover. The others love them. Go figure. I’ve made my peace with it :)
If however, you’ve got someone in your house that’s on the fence, undecided about these little gems and will take them but would rather leave them, please give this recipe a go. It’s a Brussel sprout game changer.
Butter fried with most things takes food to another level, and sprouts are no exception.
By the time these land on your plate, they’ll be buttery, tender and caramelized. If you only buy sprouts once a year like I used to (yep, that’s the Holidays!), you might just find yourself hunting these down as the disappear from the shops right around early January.
They really are that good.
How Do You Clean Brussel Sprouts
To clean a bag of sprouts, I simply place them in a large colander, out it in the sink and then run the tap. If there are any browning leaves or leaves that have been nibbled by tiny creatures, get rid of those and give them a good clean. I’ve got a small nail brush I keep for cleaning awkward vegetables and I use this to gently clean the outside. It’s perhaps a little unnecessary, but that’s what I do.
When your sprouts are clean, shake the colander to get the water off and then pat them dry with a clean tea towel.
How To Cut Brussel Sprouts
Start by cutting a flat bottom on the sprouts and then cutting them in half length ways as in the picture. When you’re pan frying sprouts, being a denser sort of vegetable you don’t want to leave them whole as they won’t cook all the way through. Halving them means they’re tender and well cooked by the time they’ve caramelised and are ready.
How To Fry Sprouts
I use butter to fry these sprouts: It gives them a delicious buttery caramelised taste and stops them sticking to the pan! Make sure you don’t overfill the frying pan, and use a large enough pan so that the sprouts are not piled up on top of each other.
Ideally, the butter needs to be able to coat every sprout and piling them up won’t allow this to happen, nor will it let each sprout get as much heat from the pan as it needs.
Having less sprouts in the pan works out better, so it’s a good idea to use two pans if you’re making a bigger batch of these, and you’ve got stove top room.
Make Ahead Sprouts
The good news is that you can make these ahead, and they taste every bit as good. I’ve made this whole recipe right until the end and then let cool down and stored, covered, in the fridge until I needed them.
Once you’re ready to eat them again, dry heat a pan (you don’t need to add anymore butter, the butter already on the sprouts melts again) and gently reheat these until they’re warmed all the way through. This takes about 4-5 minutes.
Are Fried Brussel Sprouts Healthy?
Yes! Brussel sprouts are super healthy. There’s a long list of reasons why sprouts are healthy including :

- Contain ALA Omega-3 fatty acids

If you don’t have the time to stand by the stove, then just caramelise for around 5 min until golden and pop into a hot oven for around 10 minutes to finish off cooking.
