Easy Green Beans and Potatoes – Lightly sauteed green beans, caramelized onion and soft potatoes, seasoned with a little butter, salt and black pepper. A delicious way to serve up fresh green beans that’s perfect for any occasion.

This Classic Green Bean and Potato Side Dish is a family favorite. I learned it from my Grandmother and have been making it for as long as I can remember. It’s comforting, tasty and gets my kids eating green beans every time.
I know a lot of green bean casseroles call for a cheesy topping, but I think it’s a little too much. You lose the taste of the beans and more often than not end up with soggy, sloppy beans.
When you serve up beans, they should still have enough of a firmness to them without being under cooked and squeaky.
NO OVEN NEEDED
I make this recipe 100% on the stove top, so if you have a crowded oven situation (This always happens to me over Christmas Season) then you don’t need to juggle around for space.
PREP AHEAD
You can make this recipe ahead of time. Simply cover, store in the fridge and then reheat before serving.
STORAGE & REHEATING
Storage: Store in the fridge in an airtight container for up to three days. I use these as I can go straight from fridge to reheat and serving without extra dishes.
Reheat: Reheat in an covered container in the microwave, cover with foil and reheat in the oven for 4 – 5 minutes or saute briefly in a hot pan before serving.
HOW TO MAKE GREEN BEANS AND POTATOES
STEP 1: Boil your Potatoes
Bring a pot of water to the boil. Add your potatoes and a little salt. Boil potatoes for around 20 -25 minutes until soft. Drain and allow all moisture to evaporate from the potatoes.
STEP 2: Caramelize your onions
Heat a pan on the stove, add olive oil and diced onions. Saute for 5 – 8 minutes until onions have softened and slightly caramelized.
STEP 3: Saute beans, potatoes and onions
Add chopped beans and a crushed garlic clove to the onions and saute briefly for around 3-5 minutes. Stir through cooked potatoes, butter, salt and pepper. Fry for another 2 minutes. Stir gently to combine.

Green Beans & Potatoes
Ingredients
- ½ lb potatoes General purpose white potatoes, peeled and chopped
- 1 onion diced
- 1 tbsp olive oil
- ½ lb green beans fresh, chopped
- 1 clove garlic crushed
- ½ tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Bring a pot of water to the boil, add 1/2 teaspoon salt. Once water begins to boil, add peeled and chopped potatoes. Boil for 20 - 25 minutes until soft. Drain and set aside, leave uncovered to allow all water to evaporate from potatoes. Heat a pan on the stove, add olive oil and diced onion. Fry at medium heat for 5 - 8minutes until onions are soft and slightly caramelized. Stir in crushed garlic and chopped green beans.Saute for around three to five minutes until beans are tender but still a little crunchy. NOTE: This will depend on your preference as to how crunchy / soft you like your beans. Stir in the cooked potato, butter and season with salt and black pepper. Sautee for a further two minutes and use a wooden spoon or spatula to gently combine all ingredients. Serve warm.
