Honey Glazed Sliced Carrots {Clean Eating}

I never have a problem getting the kids to eat these honey glazed sliced carrots. Never. All of them (which hardly ever happens!) not only devour these when I make them, but they actually ask for them.

I find carrots and kids go hand in hand. Kids seem to be attracted to these naturally sweet vegetables and you don’t have to do much to carrots to get the kids munching them. This Honey glazed sliced carrot recipe comes top of the carrot recipe list for my kids, it’s sweet, soft and simply pretty to look at.

This recipe sums up everything we love about home cooked meals: Simple, fresh and made from real food ingredients you most probably already have in your kitchen.

Honey glazed carrots

There’s a couple of things to know about this recipe:

  • Make more than you think you should. You will eat them like Candy they taste so good. I use one big carrot per person.
  • You can crisp them up a bit more just by frying a little longer. This gives you the blackened edges that add to the sweetness.

Two Other Ways to Make this Recipe:

  1. Caramelized Cinnamon Carrots – skip the Honey and replace with 1/4 teaspoon cinnamon.
  2. Savoury Version – If you want a more savoury taste, then skip the honey and replace with a little salt and pepper.

Make ahead honey glazed carrots

Make ahead recipes have saved me many times, I love them. When life gets busy as you know, it does with kids, having recipes ahead of time is an absolute must in my book, and I make a lot of stuff before it’s needed, ready to just finish off when I need to. And these glazed carrots are no exception.

This recipe is fast and easy, with the longest part being cooking the carrots themselves, glazing them is pretty speedy. If you want to get these prepared and ready for a later time, make them as per the recipe below, then simply let them cook and cover them, and out them in the fridge. They won’t look as pretty when their cooled and refrigerated, but when you need them, just out them back in the frying pan and reheat all the way through.

Can you reheat honey glazed carrots?

These carrots reheat like a dream. I wouldn’t advise putting them in the microwave. The water content in the carrots can make them too soft and you lose the crispy sweet edging the frying pan gives you.

It only takes a few minutes to reheat these on the cooker top in a frying pan.

The sugar in the honey heats fast, so make sure the heat’s low and the glazing doesn’t catch. Five minutes is enough to get these piping hot and shiny again, depending on how thick you sliced your carrots.

Can you freeze glazed carrots?

I have frozen fully prepared honey glazed sliced carrots before, once, and I wouldn’t again. The glazing crystallised and didn’t return to it’s beautiful original state after I reheated them. Instead, I now keep cooked sliced carrots in the freezer, saving the majority of the cook time for this recipe, and then add the glazing when I want them.

If you want to freeze your cooked sliced carrots, allow them to cool, then use a Ziploc bag like these ones and bung them in the freezer. They’ll last for a month frozen.

How to make honey glazed sliced carrots

Ingredients

  • 4 -6 Medium Sized Carrots finely sliced (one person)
  • 1 Tablespoon salted butter
  • 1 Tablespoon honey

Instructions

  • Heat up a large non stick pan on the stove to med/high heat.
  • Add butter and honey and allow to melt.
  • Add carrots and stir until well coated in honey butter mix.
  • Use a wooden spoon to stir carrots while they fry. This will take around 4 – 5 minutes. You need to watch so that the carrots don’t burn. You want glazed not burnt. Remove from pan once the carrots have turned a golden colour and serve.
