We love an egg breakfast here and these cheese and onion scrambled eggs are a really nice alternative to the usual eggs we have. Eggs cook so fast they make a fab school morning breakfast, are healthy and will keep the kids going until lunch. And pretty perfect served on a chunky piece of toasted wholegrain bread!
Cheese And Onion Scrambled Eggs
This easy take on the classic scrambled eggs on toast is like the breakfast version of this cheese and onion quiche. Cheese and onion go together so well, the onions become quite sweet when they’re cooked on a low heat and the strong flavor of raw onion mellows and becomes something the kids like. Well. two of them anyway :)
I use a white onion for this rather than a red one, and I always make sure to cut it really thin, because while the kids generally like cheese and onion, onions have been something I’ve had to work on as the kids weren’t all that keen when we started this, but they’re really nutritious and so I wanted to find things I could pout them into that would get eaten. And slow cooked on a low heat is the way to go.
Benefits Of Onions
Onions are a great source of:
- Vitamin C
- Vitamin B6
- Potassium
- Manganese
- Copper
They also have potent anti-inflammatory properties and are a good source of potassium. So Yay to onions. If you’re kids are a little onion resistant, try these eggs. You can always reduce the amount of onion to start with and work your way up from there.
Most kids I’ve ever come across love cheese. Seriously, cheese seems to be an almost universal winner for kids. Being a big source of protein helps (along with the eggs) to keep the kids going from breakfast until break with no rumbling tummies to be heard! I use Cheddar cheese, a fairly strong one as we’re big cheese fans in this house. Of course feel free to use a milder cheese if your kids prefer a milder flavor.
The bakery near our house sells the most delicious loaf of freshly baked Wholegrain bread. It’s loaded with grains and is absolutely delicious. If you have a local bakery buying a fresh loaf is the best way but the supermarkets often have bakery sections and so wholegrain bread’s not to hard to find. I cut chunky, thick slices and toast them under the grill, mostly because my toaster can’t fit slices in it as chunky as the kids like it!
