Moist, sweet and healthy. And all done in your blender. Clean Eating Chocolate Banana Muffins that are perfect for school lunches, after school snacks, smothered in custard as a dessert or just … well... did I mention they are good for you? Do you even need a reason to tuck into these babies? Oh yes – And the kids love them – so make double!!!
My two younger kids come home from school –“Starving” (their words). I pack plenty of food for lunch, but every day I see them shuffling down our dusty driveway and I know they are thinking two things, “What will I complain about and what will I eat when I get through the door?”. I’m not a mind reader – they actually tell me this stuff.
In a perfect world I would serve our dinner at 3.05pm. Because I figure they would eat anything then. It’s a magic time. But that can’t happen. Hubby is at work and the teenagers are still at school. I guess I could make them wait – but hungry kids are grumpy kids, so I’ve come up with the planned after school snack in our home.
No more scrounging through the fridge at our house.
No more complaining that “there’s nothing to eat (a.k.a junk food with sugar added). I have found a much easier way.
I prepare our afternoon snack as if it’s a meal. I can imagine you are thinking something along the lines of – “Agh! Something else to do“, but bear with me here – it has made my after school routine a blissful time.
Kids now simply grab two things when they walk through the door:
1. A piece of fruit (or fruit Popsicle in Summer)
2. Something out the baking box.
THE BAKING BOX
Twice a week I bake something. And I pop that ‘something’ into the Baking box. I keep this in the fridge – only because it makes me feel better and I try to have at least two varieties in the box – but sometimes it’s just a whole lot of the one thing.
This Baking Box is used exclusively as a source for two things:
- School lunch boxes
- After School Snacks
It’s such a simple thing, but it has made my morning and afternoon routines that much easier.
My job is to simply top up the Baking Box.
After that everything just falls into place – I always have something for school and hubbies work lunches and the kids know where to look when they are feeling peckish. .
JUST TRY IT.
This week, get yourself a big airtight container (I have a 5 litre capacity one) and bake two types of goodies to go in it.
Start with these banana blender muffins. Because they are easy. And healthy. And Yum.
- 3 x Ripe Bananas
- 1 Cup Plain Organic Flour
- ⅓ Cup Maple Syrup
- ⅓ Cup Coconut Oil OR other mild tasting oil OR Butter
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ⅓ cup Cocoa
- 1 teaspoon vanilla exctract
- 2 x Free Range Eggs
- Preheat oven to 350'F / 180C
- Line a 12 Hole muffin tray with muffin papers
- Place all ingredients in blender and blend until smooth (Around 20 seconds)
- Pour into muffin cups.
- Bake for 12 - 15 minutes. Check that muffins are cooked by touching. They should feel spongy.
- Remove from oven and allow to cool on tray before eating.
