This is guaranteed to become one of your go-to favorite salad dressings. The fresh lemon and honey taste is magical. One of our favorite salads to pair this up with is a Chopped Mexican Salad.
Slightly sweet, slighty tangy and a whole lot of yummy. The freshness of the squeezed lemons (or limes) combines so beautifully with runny honey, dijon mustard and crushed garlic.
This recipe makes half a cup of dressing and lasts a week in the fridge.

Salad dressings are one of the easiest DIY recipes to make at home. A couple of simple ingredients, a few minutes of your time and a good shake is all it takes.
If you have any little recycled condiment jars piling up in the corner of your kitchen cupboard, then this is the time use them.
How to make fresh lemon juice
Every kitchen should have one of these, a regular lemon sqeezer. Its entire purpose is catch the lemon seeds and strain out the juice all in one go. Powered by good ol’ fashioned manual labour.
I like to add the the ‘lemony bits’ (after picking out the seeds) back into the dressing to give it a bit more texture, but this is optional. For a smoother dressing, just add the juice.
LEMON AND HONEY DRESSING RECIPE
Clean Eating Last Minute Lemon Salad Dressing
- ¼ cup lemon juice Juice from 2 lemons
- 1 tsp Dijon mustard
- 1 clove Garlic crushed
- 2 tbsp Olive oil Mild tasting
- 1 tsp honey
- ½ tbsp white vinegar or apple cider vinegar
- Mix all ingredients together. Store in an air tight jar in the fridge for up to a week.
