Slightly sweet, slightly tangy and a whole lot of yummy. The freshness of the squeezed lemons (or limes) combines so beautifully with runny honey, dijon mustard and crushed garlic.
This recipe makes half a cup of dressing and lasts a week in the fridge.

How To Make Fresh Lemon Juice
Every kitchen should have one of these, a regular lemon squeezer. Its entire purpose is catch the lemon seeds and strain out the juice all in one go. Powered by good ol’ fashioned manual labour.
I like to add the the ‘lemony bits’ (after picking out the seeds) back into the dressing to give it a bit more texture, but this is optional. For a smoother dressing, just add the juice.

- ¼ cup lemon juice Juice from 2 lemons
- 1 tsp Dijon mustard
- 1 clove Garlic crushed
- 2 tbsp Olive oil Mild tasting
- 1 tsp honey
- ½ tbsp white vinegar or apple cider vinegar

- Mix all ingredients together
- Store in an air tight jar in the fridge for up to a week
