Sweet vanilla Valentines Day muffins with strawberry hearts. Perfect. Get the little ones making these cute little muffins to hand to to their friends (or scoff at home!) and share a little love!
Valentines Day Muffins
Valentines Day for us is one of those occasions we like to celebrate, either with crafts, or food, and while of course it’s not a same level celebration as say, Christmas, it definitely doesn’t go by unnoticed!
Being the kinda family that uses muffins with alarming regularity for, well, almost any occasion, Valentines Day is way to good of an opportunity to let it slide without taking advantage of it and so I simply had to make something special and sweet and kinda cute for Valentines day.
The kids always used to cut hearts out of red card and write little notes on them and then hide them around the house when they were smaller, but now they’re a little bigger, that adorable traditional became childish to them.
Sad, I know :(
We needed something new to do to celebrate Valentines Day and these muffins is it. We now show our appreciation and love for each other with muffins. Is there a better way? :)
These muffins are simple, moist, topped with some fresh whipped cream and have some little strawberry hearts on the top to mark them out as Valentines Day treats!
Make Ahead
If you want to make these ahead of the time when they’re going to be munched, you can, but I’d advise hanging on to pipe them with the whipped cream until you need them.
You can whip the cream ahead of time and keep it in the fridge but the dilemma with cream topped muffins is that the cream needs to be in the fridge while the muffins themselves are better out of the fridge.
Here’s what I do when these are made ahead:
- Make the muffins up to 2 days ahead of time and store them in an airtight container
- Whip the cream a few hours before I need it and store it in a piping bag in the fridge ready to go. If you use the disposable bags you can simply snip the end off when you want to start piping
- Have your strawberries ready to go, waiting in the fridge
It takes just a few minutes to pipe and top these muffins when you want them and doing it this way means you get the un-chilled muffin with the chilled fresh cream.

How Long Do These Last?
Undecorated, these muffins will last for up to 3 days in an airtight container.
You can also freeze the muffins (undecorated!) once they cooked and cooled, and they’ll be happy in your freezer for up to a month.
To defrost them when you want to, take them out of the freezer and put them onto a plate on the kitchen worktop for 4-5 hours until fully defrosted and have reached room temperature.
If you need them sooner than this you can speed the process up by defrosting them in the microwave for a couple of minutes. Make sure they’re not warm at all when your top them with your cream or you’ll end up with a runny liquid cream and it won’t be pretty!

How To Make Valentines Day Muffins
Ingredients
- 3 Large Eggs
- 1½ Cups Flour Buckwheat, white spelt, einkorn
- 1 tsp Baking powder
- 1 Cup Butter Unsalted, room temperature
- 1¼ Cups Coconut sugar
- 1½ tsp Vanilla bean paste
- 2 Cups Heavy cream Whipped
- 6 Strawberries Sliced into hearts
- 1 tbsp White choc chips For decoration, optional
Instructions
- Turn your oven on to heat up, to 190° and line a 12 hole muffin tin with muffin papers
- In a large mixing bowl beat the eggs and coconut sugar with electric beaters until the muffin mix is light and fluffy
- Then put the butter and vanilla bean paste into the egg and sugar mix and beat again for a couple of minutes
- Add the flour and baking powder and use a wooden spoon to combine them, trying not to ‘over mix’ and only until all the flour is combined
- Divide the batter between the muffin liners and bake in your oven for 12-14 minutes, until golden on top and cooked through. Allow to cool fully
- While the muffins are baking, use the beaters to whip the cream and store in the fridge until you’re ready to use it
- Once the muffins have fully cooled, slice them a little across the top to you have a flat surface. You just need to take off the ‘peak’ of the muffin
- Using a piping bag, pipe the cream onto the top of the muffins
- Hull the strawberries and slice them from top to bottom once, starting in the centre. The slice again, with the hulled part of the strawberry forming the ‘v’ of the heart. Top each muffin with a strawberry heart
