Oh yes. Just yes. These Parmesan Potato Chips are that good that they hardly ever make it to our plates. Kids flock like seagulls as they come out of the oven. So, when in doubt ALWAYS make more. For a standard serve, I work on one large potato per person, but there are never leftovers. Seriously. These are Good.
Ingredients
These parmesan chips use very few, very basic ingredients that you’ve likely got in your kitchen already. It’s such a good example of how a few non-fancy things can make something so yummy!
Potatoes
Most of us some potatoes knocking around in the kitchen, right? Can’t think of a much better way to use them for a snack, see below for the best potato type to use.
Olive oil
Good old Olive oil. Most Clean oils will work here, except coconut, which is way too sweet.
Sea salt
A light scattering of sea salt brings out the flavor even more so in these chips. I only use salt to sprinkle on top, feel free to leave it off.
Parmesan
Either use pre shredded Parmesan or grate it from a block. I’ll sometimes buy pre shredded if it’s on offer, otherwise I stick to a block.
And that’s literally it. Easy, moorish and extremely popular with the kids: Parmesan chips!
The Best Potatoes To Use For Chips
Every week I buy a 8 kilo bag of potatoes. It sounds like a lot, but we manage to get through it. I try and add potato to a lot of our meals as it’s really cost effective and, well, delicious.
When I’m making chips (or any potato dish I want to be crispy) I find the best potatoes for the job are of the floury variety. So that’s Desiree, King Edward and Maris Piper, among others. The big bags of ‘all purpose’ potatoes are also usually good for making chips. It’s the crispy edges you’re after, and a floury potato does this best.
How To Make Your Chips Crispy
You know that crispy crunchiness you get from a delicious chip? That’s what we’re after here. And the best way I’ve found to get that is by coating the potato in a little flour (you can also use Cornmeal for extra crunch!) and cooking them in hot oil. They’d almost be mistaken for deep fried chip shop chips, if you do it this way.
The flour provides the coating that allows the potato to stay beautifully fluffy in the middle, while retaining the outside crispiness. I prefer to keep these parmesan potato chips chunky. There’s a place for skinny fires and for my lot, this isn’t it: but feel free to cut these into the thickness you prefer. Just remember the thinner the chips, the less time they’ll need in the oven.
Parmesan Potato Chips
Ingredients
- 8 Large potatoes peeled and cut into potato chip sized lengths
- 2 tbsp Olive oil
- 1/2 Cup Grated Parmesan Cheese this will depend on how cheesy you like your chips
- 1 teaspoon Sea salt
- 2 tbsp Plain flour
Process
- Preheat oven to 180 Celcius / 370 Fahrenheit.
- Dust flour and salt over your potatoes. Using your hands, mx to make sure the flour coats the potatoes. This will increase the crispiness at the end. Add the oil and parmesan to the potatoes and mix around to get potatoes nicely covered.
- Spread the cheesy potatoes evenly on a non stick oven tray.
- Place in the oven and bake for 20 min. Now this may vary a bit depending on how thick your potato chips have been cut. You will know they are ready when they turn a golden colour.
- Remove from the oven and serve.
