This healthy cheeseburger soup is a fun twist on standard cheeseburger soup. Our kids go crazy for it!
Healthy Cheeseburger Soup
Want an easy midweek dinner that’s super kid friendly, quick and easy? Of course you do! This healthy cheeseburger soup is a keeper, made with ground beef (that’s the hamburger!), a rich tomatoey soup base and thickened with potatoes (that’ll be the bun!) and topped with a cheesy topping when your serve it. Mmmm. Yes please!
I use a tin of these finely chopped organic tomatoes as the base to this soup, you don’t specifically have to hunt out these finely diced tomatoes and can use any chopped tomatoes you like, but in the interests of not having ‘bits’ of tomatoes in the soup and creating a potential meltdown, I get these ones :)
Adding potatoes to this soup makes it thicker, as well as making the soup filling, I also add a tin of corn for extra nutrition and a bit of color and there are some other suggestions below if you’d like to add more veggies.
I make this on the stove top in my soup pot but you can also make this in the slow cooker or dutch oven and come home to not only an awesome smelling house but also a yummy dinner ready and waiting for you :)

Cheeseburger Soup Ingredients
I make this soup a little healthier than you might have seen before. Many hamburger soup recipe’s use tinned tomato soup for the base, I’ve changed this up for 100% diced tomatoes and use a little oregano and other seasonings to get the flavor.
Ground beef is the meat of choice I make this recipe with. It mimics a hamburger, makes a lovely rich broth within the soup and is warming and yummy. I have also made this with ground Turkey and that works just fine, you just ned up with a slightly less rich broth.
It’s personal preference as to what you can get hold of and what’s available to you where you live, so use whichever you prefer.
I add some grated onion (grated to avoid onion ‘bits’!) tinned and drained corn to this soup to add some extra nutrition and color, you could add some other vegetables, green beans, diced pepper, carrots or celery.
Let’s talk potatoes. I use potatoes in this cheeseburger soup for two reasons. Firstly, they add a filling element to this recipe, they’re soft and tender and absorb all the cheeseburger flavors making them one of the kids favorite parts of this. The second reason I add potatoes is that they help to thicken the soup.
You’ll find that different potatoes give you different results. The everyday type potatoes, the kind of ones we use for mashed potato etc…will break down. I’ve tried adding them nearer the end of the cooking time, but this soup doesn’t take very long to make form start to finish and so this method doesn’t really work.

Thickening Cheeseburger Soup
I now use more waxy potatoes as they crumble less and can be cooked for a lot longer. Waxy potatoes are potatoes like Charlotte, Jersey royals and Maris Peers. If you only have the softer potatoes feel free to use them, but you may not get as many potatoes in the soup as you might like!
I like to keep this super simple and basic, it makes it quicker to put together and i know the kids will devour it at dinner!
What To Serve With Cheeseburger Soup
Most importantly, serve this with grated Cheddar cheese, and lots of it! Sometimes I put a bowl of shredded on the table but the kids can sometimes get a bit cheese happy and go overboard, so for the smaller ones I’ll give them their own pot of (restricted!) cheese and let them serve themselves and watch the cheese melt into their soup!
This healthy cheeseburger soup goes pretty well with a delicious loaf of crust wholemeal bread. Either cut it into thick slices or let the kids tear at it (think about the crumbs later!) and use it to mop up the soupy juices.
If we happen to have some I also serve this sometimes with some sour cream. It’s mixes into the soup beautifully and adds a creamy feel to it!

This cheeseburger soup makes an fab dinner but also a pretty scrummy next day leftover lunch as well. You can store any leftovers in an airtight container or bowl covered with food wrap, in the fridge for up to 2 days.
To reheat this soup, pour it back into a pan and reheat it over a medium heat and let it simmer until it’s piping hot throughout.

How To Make Healthy Cheeseburger Soup
Ingredients
- ½ lb Ground beef
- 2 Large Potatoes Waxy, peeled and diced into small pieces
- 1 tin Finely diced tomatoes
- 1 tin Beef stock Make it up in the empty tomato tin
- 1 tin Corn Unsweetened, drained
- 1 medium Onion Peeled and grated
- 1 knob Butter To brown the onion, you can also use olive oil
- 1 tsp Oregano
- ½ tsp Onion powder
- Salt & black pepper To season
- Cheddar cheese To serve
Instructions
- In a large pan, heat your butter over a medium heat until it’s melted and then add your onion and sauté it for a couple of minutes making sure not to burn it
- Add the ground beef to the pan and break it up, stirring it occasionally until it’s cooked through. Season well with salt and black pepper. Turn the heat down if it’s browning too much
- Measure out your Oregano and onion powder and then sprinkle it them the ingredients. Cook them for 2 minutes
- Pour in your diced tomatoes and then use the can to make up one can full of beef stock/broth. Pour this into the pan and combine with the other ingredients
- Add in your drained corn
- Add ½ tin of water to the pan and then add your peeled and chopped potatoes and then combine all your ingredients well. Get the heat to a point where your soup is simmering and then leave it to cook for 30 minutes, stirring occasionally
- Divide the soup into bowls and serve with your shredded Cheddar cheese and pickles if your lot like them!
