I’ve been making this Healthy Chicken Stroganoff dish for years and it’s one of the recipes that’s part of our families regular dinners. It tastes like way more work than it is: I’ve made this for dinner parties and made this when time’s short, either way it always turns out good and the kids and adults both love it. Total time? 20 minutes :)

Perfect for those chillier nights when you want something filling, warming and delicious, this recipe’s a healthier take on an old classic, with minimal prep time thrown in for good measure!
It’s not really changed from the days gone by when I used to make it very occasionally, feeling like it was always a bit of a hassle to make from scratch. It feel lighter than a Beef Stroganoff somehow, but every bit as delicious.
Now, it’s one of the easiest, most popular things I cook.
I tend to use boneless skinless chicken breasts meat for this recipe, cut very thinly to speed up cooking. I don’t use one chicken breast per person as I think it’s a little too much for most kids, instead I use 4 between 6 people.
Feel free to adjust this as you feel’s right. You can also use chicken thighs in this if that’s what you have.
I add mushrooms to this recipe, cooking them until they’re soft and tender, and they complement the chicken perfectly. If your kids are fussy mushroom eaters, this dinner might get them eating some.
The sauce is a simple one made with beef stock and flavored with sweet Paprika. Using beef stock instead of chicken adds a depth of flavor you don’t get with chicken stock, and it becomes rich and creamy with a little added sour cream.

In this house this is served almost always with buttery mashed potato. It just works.
The mash soaks up the sauce and besides, who doesn’t love mash? I usually make a vegetable side, steamed broccoli mostly, and between the mash, veg and stroganoff, you’ve got a pretty substantial winter dinner.
You could also serve with this chicken stroganoff:
- Wholegrain rice
- Cauliflower rice
- Potato Bake
- Butter pan fried brussel sprouts
- Thick wedges of wholemeal bread for mopping up the sauce!
- Pasta – I’d recommend using a pasta that holds the sauce well, tube shaped pasta like Penne
- Egg noodles – I’ve used noodles before, they soak the sauce up nicely!

How Long Is Chicken Stroganoff Good For?
Start by making a note of the use by date on your chicken. This gives you the final date your chicken needs to be eaten by. Veggies, I’m happy to ignore the sell by date mostly and go with the look and smell of them, but for meat, I always stick rigidly to the use by date.
If the date on the chicken is longer than 2 days from the date you make this, then it’s good, covered, in the fridge for up to two days. Even if the chicken date’s longer than 2 days, with the sour cream, I keep in in the fridge for 2 days tops.
When the stroganoff is cooled down, transfer it to a dish and cover it with food wrap. To reheat, I simply pop it into the microwave for a few minutes until the chicken is completely warmed through and the sauce is piping hot.

Ingredients
- 3-4 Skinless Chicken Breast Butterflied, sliced thinly, change the amount of chicken to suit your family
- 3 cups Mushrooms Quartered
- 1 large Onion sliced thinly
- 2 tbsp Olive oil You can also use butter
- 2 tbsp All Purpose Flour Buckwheat or similar
- 1½ tsp Sweet paprika Ground
- 1½ cups Beef Broth You can also use chicken broth for a slightly less rich sauce
- 2 tablespoons Sour cream
- Parsley To serve
- Salt and pepper To season
Instructions
- Heat the olive oil over a medium heat on the cooker top and brown your chicken for 5 minutes in a large skillet or pan
- Add the mushrooms and onions, stir to combine and cook for a further few minutes until they’re starting to become tender
- Season the chicken, mushrooms and onion well
- Add the flour and sweet paprika and combine well so all the flour and paprika is combined with the food. The mixture will become a little ‘gluey’. Cook for a couple for minutes
- Add the beef stock and stir in well until the flour and paprika are combined with the stock
- Turn the heat down and let the sauce simmer for 7-8 minutes. The sauce will thicken
- Take the pan off the heat and stir in the sour cream
- Add parsley and serve
