Omelettes are one of the quickest and easiest breakfasts to whip up for the kids and knowing how to make an omelette with cheese and bacon will mean you’ve always got a fast, protein rich breakfast up your sleeve ready to feed a hungry crowd!

This omelette will serve either one older kid or 2 smaller kids, if you cut it in half.
I find it easier to make an omelette with at leats 2 eggs, it’s easier to work with when the eggs are slightly thicker and there’s more egg to cook.
If you want to halve the recipe and make an omelette using only one egg, think about investing in a mini omelette pan like this one, so the omelette isn’t too thin.
There are so many fillings you can put in an omelette, I’ve made this one with cheese and bacon but there are some more ideas for omelette fillings below if you need some inspiration!
I’ve used bacon medallions in this recipe because my kids don’t like the fatty bits of bacon unless it’s super crispy, and super crispy bacon doesn’t work well in an omelette, in my opinion. I also use the same pan to cook the bacon and then to cook the omelette. It saves on washing up and I see no good reason not to do this :)
Can You Put Raw Bacon In An Omelette?
I don’t like to add raw bacon to my omelettes because I’m concerned it’s not going to cook thoroughly. Eggs cook so fast that I’m never convinced that the bacon will catch up and cook enough for me to be happy and so I cook the bacon first.
I use the same pan to cook the bacon in and so really it’s only another couple of minutes waiting for the bacon to cook and for peace of mind, I consider this 2 minutes well spent!
Can You Put Milk In An Omelette?
I know there are lots of people out there who will disagree and say that an omelette needs to have a little milk added to the egg mixture. Some are even more decadent and go for cream.
However, I do not.
Since I’m usually feeding these to the kids, I find adding milk or cream to the egg mix keeps the eggs from setting properly and gives you a looser omelette and so I leave and liquid additions out of the mix.

Is The Inside Of An Omelette Supposed To Be Runny?
A baveuse Omelette is an omelette that’s loose, or runnier than fully cooked and set eggs. I believe that traditionally an omelette is cooked on the bottom and fully set and then you add the toppings to the unset top and then fold it, so that the middle is ‘juicier’ than the outside.
Now. While I’m sure for the omelette pro’s out there this is the correct way to serve an omelette, there are many of us who’re not all that keen on serving (or eating!) raw egg to the kids, and so I don’t make omelettes this way.
As a home cook and Mom rather than a professional chef, I cook what I can get the kids to eat and what I’m happy serving, but feel free to cook these eggs the way you like them. It’s possible my kids and I am just just a bit picky!
Additions
The basic omelette remains the same, but you can change it up by filling it with meat and veggies of your choice. Here are a few of our favorite omelette toppings:

How to Make A Cheese And Bacon Omelette
It takes around 5 minutes to make a basic, no frills omelette with cheese and bacon from start to finish:
- Heat up a non stick pan and add a little knob of butter or olive oil.
- In a bowl, crack two eggs and a pinch of salt and pepper. Whisk well with a fork.
- Pour the egg mix into your hot pan. Swirl the pan to spread evenly.
- When the omelette is looking cooked underneath, but still a little runny on top, sprinkle grated cheese over the top.
- Use a spatula to fold one half of the omelette towards the middle. Let it cook for around 20- 30 more seconds until it starts to turn a golden colour underneath and serve.
- You can either fold it all the way or over for a half moon shaped omelette.

- 1 tsp Olive oil

- Heat the olive oil in a. small frying pan until the oil is hot
- Add the bacon pieces and cook through
- Season the eggs with a tiny bit of salt and add to the pan, keeping the bacon in the pan when you do so. Leave for 30 seconds to start to cook
- Using a wooden spatula, gently move the egg from the sides of the pan into the middle, letting the raw egg spill into the space created and repeat until there is no more raw eggs to move to the centre
- Using the rubber spatula, flip the omelette over. Add the cheese on top and fold your omelette. Cook for another 30 seconds
