Whip up a jar of creepy, healthy Halloween eyeballs in a couple of minutes. Don’t tell the kids. Just leave them in the fridge for them to find. Ba hahahaaa {Evil laugh}
These slightly gory looking Lychee and Blueberry eyeballs are an easy, fast dessert option. Serve on their own, with a blood red frozen dessert or (this one is for Mommy) add a splash of vodka for an adult-only Halloween dirty eyeball cocktail.
HOW TO MAKE HALLOWEEN EYEBALLS
All you’re going to need are THREE ingredients and a chunky jar.
Ingredients:
- Canned lychees
- Frozen Blueberries
- Cranberry (or grape juice)
Instructions
- Drain the juice from the lychees. The only lychees I can find are in syrup so I always drain and rinse before using.
- Pop a frozen blueberry inside each lychee and layer place carefully in your jar with the blueberry eyeball facing out. You want your fruity eyes ‘looking out’ the glass towards you. Frozen blueberrries are easy to work with than thawed ones, but feel free to use fresh blueberries if you have them.
- Pour cranberry juice over the lychees to fill your jar.
To decorate your jar, wrap some string around the rim and add a handwritten lable.
